10 Vegetables to Plant in October for Winter and Spring Harvests

October planting can extend harvests or start overwintered crops, but the right vegetables depend on local frost timing, maturity and planting method.

October planting can extend a vegetable harvest or start crops that will overwinter for spring, but the right choices depend on your climate, frost timing and planting method. In colder parts of the United States, many fall crops need to be sown or transplanted before October; in warmer regions, October can open the main cool-season growing window. Treat these 10 crops as a regional menu, not a universal planting calendar, and check your local Cooperative Extension recommendations before planting.

How to decide what to plant in October

Start with your local first-frost guidance and the forecast: killing-frost timing varies by location and from year to year, Virginia Cooperative Extension cautions. Then count backward from the likely cold period using the crop’s days to maturity. Iowa State University Extension and Outreach emphasizes both maturity time and frost timing when planning fall vegetables.

  • Check the planting method. A date for direct-sown seed is not interchangeable with a date for transplants, onion sets or cloves planted to overwinter.
  • Match the crop to the conditions. Texas A&M AgriLife lists beets, carrots, garlic, kale, lettuce, spinach and turnips among frost-tolerant crops. Iowa State separates vegetables into tender, semi-hardy and hardy groups; frost tolerance does not mean every crop will keep growing through severe cold.
  • Use protection as a buffer, not a substitute for timing. Virginia Tech says row covers or cold frames may extend expected spring and fall planting and harvest windows by two to four weeks. That estimate does not remove regional limits.

For a practical regional comparison, consult Virginia Tech’s vegetable planting guide, the University of Maryland’s planting calendar, or your state’s local extension service. Warm-region gardeners can also use UF/IFAS guidance for North Florida and Texas A&M’s Texas fall gardening guide.

10 October vegetables to consider

The dates below show why a single nationwide list cannot function as a planting schedule. Some crops are October options in particular regions; others are worth considering only where a local calendar supports late planting or where the goal is an overwintered spring crop.

Vegetable October planting outlook What to know
Garlic A strong fall-planting candidate in many regions. Virginia Tech gives October planting dates in Zones 7a and 7b and October 15–November 15 in Zones 8a and 8b. Maryland Extension recommends mid-October through mid-November. Plant for a later harvest; timing depends on region. Virginia Tech; Maryland Extension.
Spinach Possible in parts of Zones 7 and 8, but often too late in cooler areas. Virginia Tech lists sowing windows extending into October for some Zone 7 and 8 locations. Maryland’s fall sowing window is August to early September. Iowa State gives 45–60 days to maturity for leaf lettuce and spinach in its Iowa fall-planting guide; that figure is a regional schedule value, not a universal constant. Leaf lettuce May work for baby salad crops in some Virginia Zone 7 and 8 locations. Maryland’s fall sowing dates end in August. Protected growing can extend a season, but an October planting is not a guarantee of a winter harvest. Virginia Tech; Maryland Extension.
Radishes Possible into early October in some Zones 7 and 8 calendars; often earlier elsewhere. Maryland’s fall sowing guidance ends in mid-September, although harvest may continue into October. Iowa State gives 25–40 days to maturity in its Iowa fall-planting guide; cultivar and regional variation apply. Virginia Tech; Maryland Extension; Iowa State Extension.
Mustard greens One of the more plausible October sowings in parts of Virginia Zones 7 and 8. Virginia’s fall dates reach early to late October depending on zone, while Maryland’s fall sowing window ends in mid-August. Follow the calendar for your area. Virginia Tech; Maryland Extension.
Carrots A regional option, especially where warm conditions allow a later sowing. Many northern planting windows end before October. Texas calendars include later dates in warmer regions. Central Oregon guidance describes a late-season mulched bed intended for late-fall or early-winter harvest, a location-specific approach rather than a general prescription. Texas A&M; Oregon State Extension.
Kale Consider it where a local calendar supports a late cool-season planting. Kale tolerates frost, but Maryland and Virginia generally schedule fall sowing or transplanting earlier than October. Frost tolerance alone does not make late planting suitable everywhere. Maryland Extension; Virginia Tech.
Onions In some regions, fall planting establishes onions to overwinter for spring harvest. UF/IFAS includes onions among North Florida crops planted in fall to overwinter. The right date and planting material depend on the region; this is not a recommendation for every onion type or location. UF/IFAS Extension.
Peas Primarily a warm-region or locally approved October option. UF/IFAS identifies peas as a cool-weather crop for North Florida. Virginia and Maryland calendars mainly show spring planting or earlier fall windows, so check local timing rather than assuming an October sowing will establish. UF/IFAS Extension; Virginia Tech; Maryland Extension.
Fava beans A mild-winter or local-calendar candidate, not a broad U.S. recommendation. Regional Oregon State and University of California material includes October planting guidance, but the available official guidance does not establish that the timing works across U.S. climates. Verify locally before planting. Oregon State Extension.

Plan around the harvest you want

For harvests before winter

Focus on crops whose local sowing window still leaves enough time to mature before hard cold. Radishes are relatively quick, but the Iowa maturity estimate of 25–40 days is specific to that fall-planning guide and does not override your region’s calendar. In some areas, October is better suited to harvesting existing plantings than starting new ones.

For crops that will overwinter

Garlic is the clearest broadly supported example in this list: fall planting is for a later harvest, not an October crop to pick immediately. In North Florida, UF/IFAS also identifies onions as a fall-planted crop for spring harvest. Treat both as region- and method-specific plans.

When the planting window is tight

A row cover or cold frame may help extend the season in suitable conditions. Virginia Tech estimates a possible two-to-four-week extension for expected planting and harvest windows, but protection cannot make a crop’s maturity time or local winter disappear.
