You can start with seeds or a garden-center transplant, or bring a garden plant inside in fall.
Choose how to start your parsley
Bring in a garden plant
In fall, dig up a parsley plant, pot it in prepared potting mix, and move it to a cool location with strong light. Before bringing it indoors, check leaves and stems for aphids, spider mites, thrips, and whiteflies. Acclimate the plant gradually to indoor light and temperature. The University of Illinois Extension explains this overwintering approach and its seasonal limits in its parsley growing guide.
Plan to discard an overwintered plant in spring and start fresh garden transplants. It may produce a seed stalk in its next season, with leaves that are tough and bitter.
Start from seed or a transplant
You can also grow parsley from seed or a garden-center transplant. For general indoor herbs, Illinois Extension recommends a container at least 6 inches in diameter with a drainage hole; this is general herb guidance, not a parsley-specific size requirement. Choose flat-leaf Italian parsley if culinary flavor is your priority: Illinois Extension describes it as more flavorful than curly parsley, but does not establish that it grows better indoors. Set up a container that drains
Use a pot with drainage holes and loose, well-drained potting mix. Do not use garden soil in a container, where it can impede drainage. Empty standing water from the saucer so the mix does not remain waterlogged. See Illinois Extension’s container herb guidance.
Provide enough winter light and a cool location
Light is often the main winter challenge. Place parsley in your brightest available window. If natural daylight is inadequate, use supplemental lighting: Illinois Extension suggests indoor herbs may need 12–16 hours of supplemental light daily, while University of Minnesota Extension gives about 12 hours of artificial light as general herb guidance. These are recommendations for indoor herbs, not parsley-specific measurements. Insufficient light can make plants thin and spindly.

Rotate a pot by a quarter turn every few days near a bright window to encourage more even growth. Illinois Extension describes room temperatures at or below 70°F as suitable for indoor herbs in its winter herb guidance. Water when the mix begins to dry
Check the potting mix rather than following a fixed calendar. Water when it is dry; Minnesota Extension suggests checking about half an inch below the surface. Water thoroughly, then let excess drain away. A persistently wet pot can harm the plant.

Feed sparingly, if needed
Fertilizer is optional maintenance, not a way to guarantee more parsley. Illinois Extension discusses using water-soluble or liquid fertilizer every two weeks for indoor herbs, following the product label, and cautions that overfertilizing can reduce flavor and aroma. Do not exceed label directions. See its indoor herb care guidance.
Harvest stems to keep using the plant
Once the plant is large enough to spare leaves, cut stems at the base rather than merely snipping leaf tips. Parsley can be harvested as it grows; avoid removing so much foliage at once that little remains to support the plant. Illinois Extension describes stem harvesting in its parsley guide.

Check for pests, especially after moving plants inside
Inspect the undersides of leaves and the stems for aphids, spider mites, thrips, and whiteflies. Check again periodically through winter, and use an appropriate control measure if you find an infestation.
