A great winter barbecue comes down to good preparation and safe food handling—not guesswork about how the cold will affect the grill. Keep the menu manageable, set up serving areas before guests arrive, use a food thermometer, and keep hot and cold dishes at safe temperatures. These six tips make the day easier to host.
1. Choose a simple menu and prep ahead
Pick a few dishes that can be prepared before guests arrive, and avoid making every part of the meal depend on the grill. Prepare sides, sauces, and serving items in advance so you can focus on cooking and hosting once people are there. This is practical planning advice, not a tested winter menu or a required preparation schedule.
2. Set up the cooking and serving areas
Before guests arrive, arrange clean serving platters, separate utensils for raw and cooked food, and a clear place to hold hot and cold dishes. Think through how guests will move between the cooking area and the food table, and keep the grill area accessible. For operating the grill in local weather, follow the manufacturer’s instructions; there is no universal cold-weather adjustment or safe weather threshold established here.
3. Keep raw and cooked food separate
Raw meat juices can contaminate cooked food. Use separate plates, utensils, and surfaces for raw and cooked items, and never put cooked food back on a plate that held raw meat. Health Canada advises using separate dishes and equipment for raw and cooked meats.

4. Check doneness with a food thermometer
Colour is not a reliable way to tell whether meat is safely cooked. Health Canada recommends a digital food thermometer inserted into the thickest part; for burgers, insert it from the side toward the centre. Follow the food-safety guidance for your jurisdiction. For example, the USDA Food Safety and Inspection Service’s 2017 guidance gives these minimums:

5. Keep hot food hot and cold food cold
For serving, FoodSafety.gov advises keeping cold food at or below 40°F (4°C) and hot food at or above 140°F (60°C). A warming tray, slow cooker, or chafing dish can hold food that has already been fully cooked, but check that the appliance can maintain at least 140°F (60°C). Do not use winter weather as an outdoor refrigerator: outdoor temperatures can fluctuate enough to put food in the 40°F–140°F (4°C–60°C) danger zone. Keep perishables in a refrigerator or, when transporting or holding them away from one, use an insulated cooler with ice packs. Keep raw meat and poultry separate so their juices cannot contaminate other food. Health Canada notes that using separate coolers for food and drinks can help when the drinks cooler is opened more often; see its safe food handling advice and food safety while travelling guidance.

6. Serve smaller portions and replenish safely
Put out smaller platters and replace them with fresh food as needed instead of leaving the full supply on the table. Keep cold backup dishes refrigerated and hot dishes held in the oven until serving, as the US FDA recommends. Discard perishable food left at room temperature for more than two hours—or more than one hour when the setting is above 90°F (32°C).
