A curly stalk rising from the center of your garlic leaves is usually a scape—the normal flowering stalk produced by hardneck garlic. If you want to favor bulb growth, remove the young scape when it has extended above the leaves and is beginning to curl. Keep the leaves intact, and do not treat the scape as a sign that the bulb is ready to harvest.
Why garlic grows a flower stalk
Hardneck garlic naturally sends up a central flowering stalk called a scape. It is usually a normal part of the plant’s growth, not a sign of disease or a gardening mistake. Softneck garlic generally does not produce scapes, although cultivar exceptions exist; one stalk alone does not prove that the variety was mislabeled.
Scapes tend to appear in late spring or early summer, but the calendar varies by region and growing conditions. Iowa State University Extension describes mid-to-late May, Ontario’s production guidance says late spring or early summer, and the University of Maine describes scapes in June. These are regional examples, not universal dates.
Should you cut off the scape?
It depends on what you want from the plant. Removing the scape is a common choice when the priority is bulb development. Leaving it lets the flower head develop and produce bulbils, which some growers may want to observe or retain for propagation.

The size of any trade-off in a home garden is not predictable from these figures alone. The University of Maine Cooperative Extension reports bulbs can be up to 48% smaller when scapes are left; Ontario’s Ministry of Agriculture and Food reports scape retention can reduce yield by up to 30%. These are separate upper estimates—one about bulb size and one about yield—not a promised or expected loss for every garden.
When and how to remove a scape
For the timing, Iowa State University Extension recommends cutting when the scape is immature, fully extended above the leaves, and beginning to curl—before it straightens and its bulbous tip opens. Aaron Steil, Consumer Horticulture Specialist at Iowa State University Extension and Outreach, advises: “Cut the stalk off as low as possible without cutting off any leaves.”

- Cut or snap off the stalk as low as practical without damaging any leaves. Garden snips or pruning scissors can help, but specialized equipment is not required.
- Use the young scape fresh if you like: Iowa State Extension suggests chopping it into eggs, salads, stir-fries, or pickles, or making pesto.
If the scape has already straightened or opened, the preferred timing has passed. You can still remove it if favoring bulb development is your goal; do not pull up the plant just because the stalk appeared.

No. A scape is a flowering-stalk signal, not a reliable cue that the bulb is ready to lift. Illinois Extension advises judging maturity by the leaves and the variety: harvest when about half or slightly more than half of the leaves remain green and the lower leaves are starting to brown. Varieties mature at different times, and local climate affects timing. After lifting, cure the bulbs in a dry place with good air circulation.
