Why Won’t My Popsicles Freeze? Causes and Fixes

Popsicles may need colder conditions than ice cubes, especially when a recipe contains lots of sugar or alcohol. Measure the freezer and check the mixture to find the cause.

If your popsicles are still liquid or slushy, check the freezer’s actual temperature first, then the recipe. A freezer can be cold enough to freeze plain water into ice cubes but not cold enough to freeze a sugary or alcoholic mixture solid. Measuring the freezer and checking the ingredients will tell you which problem you’re dealing with.

Why popsicles can stay liquid when ice cubes freeze

Dissolved ingredients change how a liquid freezes. Sugar lowers a mixture’s freezing point, so a sweet ice pop may need colder conditions than plain water. The effect depends on the ingredients and their concentration; ice cubes freezing are not proof that the freezer is cold enough for every popsicle.

Homemade pops with a lot of sugar, sweetened condensed milk, or alcohol can remain soft or slushy. Alcohol and excess sugar are especially likely to interfere with a firm freeze. If the freezer temperature is appropriate, try reducing those ingredients or following a tested ice-pop recipe rather than simply waiting longer.

How to check whether the freezer is cold enough

  1. Place an appliance thermometer between frozen packages in the freezer. USDA Food Safety and Inspection Service (FSIS) recommends keeping a thermometer in the freezer to check its temperature: Freezing and Food Safety.
  2. Leave it in place for 5 to 8 hours before reading it, as FSIS advises in its Appliance Thermometers guidance.
  3. Compare the result with the FSIS recommendation of 0°F (−17.8°C) for freezer storage. A dial setting alone does not confirm the temperature inside the freezer.
  4. If the reading is warmer than the target, adjust the setting according to the appliance manual. Give the change time to take effect, then measure again with the thermometer.

If the freezer remains too warm, the reading identifies a temperature problem but not its cause. The available guidance does not establish which component, if any, needs repair.

Help popsicles freeze faster

While the pops freeze, arrange them in a single layer rather than keeping a dense bundle together. Better exposure to cold air can speed cooling. FSIS gives about two hours for food 2 inches thick as an example of ideal rapid freezing, but that is not a guaranteed freeze time for popsicles: the mixture, package shape, freezer conditions, and airflow differ. Spreading them out can improve the rate; it cannot make a freezer colder than it is or override the mixture’s freezing point.

What to check with packaged popsicles

Compare affected pops with other units from the same pack. If only some remain liquid while the freezer thermometer reads at the recommended temperature, note the lot and best-before details and contact the manufacturer. A difference between packages may help the maker investigate, but it does not by itself prove a manufacturing defect.
