What beef tallow is—and how cooks use it
USDA Market News defines edible tallow as rendered fat from edible portions of beef carcasses under meat inspection, further refined to remove solids and moisture. Its glossary says, “The main use of edible tallow is a frying oil.” It is also used as shortening in a wide variety of baked goods.

Those uses help explain its appeal: tallow is an animal cooking fat with a beef-associated flavor, and it can be used in dishes where that flavor is welcome. Coast Packing Company’s July 2025 industry white paper also describes sautéing, barbecue, roasting and baking as uses. Those broader examples and the company’s performance claims should be understood as the supplier’s account, not independent comparative testing.

The current “comeback” is best understood as renewed attention around traditional or minimally processed ingredients, cooking flavor and online debate about seed oils. The Atlantic’s December 2024 account of tallow and cooking fats places that attention in the wider argument over animal fats and seed oils. Coast Packing’s 2025 white paper offers an industry explanation centered on flavor, high-heat cooking and interest in traditional fats; because the company sells cooking fats, its account is not independent proof of the trend’s causes.

There is a limited survey figure, but it does not establish a national tallow boom. Coast Packing reported that 13% of respondents in its company-sponsored survey of 2,008 adults across the contiguous United States said they had actively switched to animal fats such as tallow or lard. That figure covers animal fats collectively, not beef tallow alone. The same survey reported that 20% said they no longer use seed oils in cooking. Both are company-survey findings, not independently verified measures of household use. The available evidence does not quantify how common home use of tallow is.
Is beef tallow healthier than seed oil?
Popularity, tradition and minimal processing do not by themselves establish a health advantage. Tallow contains saturated fat. The Atlantic’s December 2024 reporting says mainstream guidance favors replacing saturated fat with unsaturated fat, and notes that substantial evidence does not support popular claims that tallow itself causes weight loss, boosts immunity or improves cognition. The evidence cited here does not establish tallow as a health intervention or support a blanket claim that it is healthier than seed oils.
For a personal dietary decision, distinguish what a fat does in a recipe—such as contributing flavor or serving as frying oil—from what is known about its nutritional effects. The supplied official Dietary Guidelines result establishes that the guidelines provide federal food-based recommendations, but the page itself was inaccessible; no precise daily limit is warranted here.

What to check when buying tallow for cooking
Choose a product clearly labeled for food use, and review its producer information and package directions. A label alone does not tell you how the fat will taste in a particular dish, so consider the intended use and ingredient list as well.
- Food-use labeling and producer information: Confirm that the product is intended for cooking and check the information supplied by the producer.
- Ingredients: Read the ingredient list rather than assuming all products are identical.
- Intended use and flavor: Consider whether a beef-associated flavor suits frying, baking or another planned use.
- Package size and storage directions: Choose a quantity you can use and follow the package’s storage instructions.
A recall illustrates why it is worth checking product notices without treating one incident as evidence against the whole category. On June 13, 2025, USDA’s Food Safety and Inspection Service announced a recall of approximately 353 pounds of a specific King Tallow product processed, packaged and labeled without the benefit of federal inspection. FSIS told consumers to discard or return that recalled product. The notice concerned that product; it does not establish that all tallow is unsafe. What the comeback does—and does not—show
Tallow’s established culinary role is clear: frying oil and, in some baked goods, shortening. Its renewed profile reflects food preferences and a broader argument about cooking fats, while the scale of household adoption remains unestablished by the evidence cited here. That makes it reasonable to choose tallow for its cooking role or flavor, but not to treat its popularity as proof of superior health effects.
