For home-grown potatoes, apply any soil-test-recommended fertilizer before planting, then consider a nitrogen side-dress once plants are about 3 to 4 inches tall. A University of Florida home-garden guide instead describes splitting fertilizer between planting and a follow-up about three to four weeks later. These are regional examples, not a universal schedule: soil-test results, compost or manure history, and local growing conditions determine what your potatoes need.
When to fertilize potatoes in a home garden
Before planting
Start with a soil test and local Extension advice. If the soil needs nutrients, incorporate the recommended fertilizer before planting. UC IPM says that where manure and other organic material have not been used, a fertilizer containing nitrogen and phosphorus can be applied before planting. Its examples include 5-10-5, 5-10-10, 8-16-16, and 12-12-12. Those blends and rates are regional guidance, not a formula for every garden. UC IPM home-garden potato guidance
During early growth
UC IPM recommends a nitrogen side-dress when plants reach 3 to 4 inches tall. In its guidance, the side-dress is 0.5 to 1 pound of nitrogen per 100 feet of row; this is the amount of nitrogen, not the weight of a complete fertilizer blend. Keep the fertilizer away from the stems: UC IPM specifies a shallow groove on the bed shoulder, 4 to 6 inches from the plant row. Replace the soil and irrigate, following the product directions. For Florida home gardens, UF/IFAS describes applying half the fertilizer at planting and the remainder about three to four weeks later. It directs gardeners to their county Extension office for recommendations suited to local conditions. How to choose the amount and fertilizer
Do not choose a rate from the fertilizer bag alone. The right nutrient plan depends on existing soil fertility and prior amendments as well as local conditions. Manure, compost, and other organic matter can contribute nutrients, so a preplant application may be unnecessary or need adjustment. A soil test and local Extension recommendation help determine whether to fertilize and which nutrients to supply.
For scale, UC IPM lists 1 to 2 pounds of mixed fertilizer per 100 feet of row as a regional preplant rate for its examples. That figure is the weight of the fertilizer blend; it is not interchangeable with its separate side-dress recommendation, which is stated as pounds of nitrogen. Why commercial potato schedules are different
Commercial recommendations are designed for field-scale production and should not be converted into home-garden rates. They may use per-acre amounts, split applications, and crop monitoring such as petiole testing. Their timing also varies by region, cultivar, season length, and production system.

Why not fertilize heavily late in the season?
Excess nitrogen can keep vines growing when the crop should be maturing. Penn State notes that excess nitrogen delays maturity. UF/IFAS also warns that late nitrogen may stimulate excessive shoot growth, delay maturity, and leave residual nitrogen in the soil that is vulnerable to leaching.
