When Are Figs Ripe? 10 Must-Know Harvesting Tips

Ripe figs are soft, droop from the stem and release with a gentle lift-and-bend. Learn how cultivar color, fresh eating, drying, storage and safe harvesting change the way you pick.

Pick a fig when it has reached its cultivar’s mature color, feels soft, droops from the stem and releases with a gentle lift-and-bend. Color alone is unreliable: ripe figs may be purple, brown, greenish-yellow or still greenish. Fresh-eating figs should be soft and fully colored without being mushy; drying figs can remain on the tree until they are fully ripe and beginning to dry.

1. Use the gentle bend test

Support the fruit and lift it, bending it back toward the branch. A ripe fig should come away easily. If it is firm and resists, leave it attached and check again soon. Pulling or yanking can tear the skin, damage the stalk and expose the fruit to decay.

2. Check softness and droop

Tree-ripe figs become noticeably soft and hang or droop from their stems. A hard, upright fig is generally immature. Test several fruits because ripening can be uneven, even on the same branch.

3. Match color to the cultivar

Ripe skin can be purple, brown or greenish-yellow. Some green cultivars remain green when ripe, so do not wait for every fig to turn purple. Use mature color together with softness, droop and easy release.

4. Notice late-stage surface changes

A nearly ripe fig may develop a slight split when gently squeezed or produce a small sugary drop from the eye at its base. These signs can confirm ripeness, but neither is required for every cultivar. Rain can also cause splitting before ideal eating quality.

5. Check the stem for milky latex

If milky latex appears from the cut stem end, the fig is not fully ripe. Avoid tasting fruit that fails the other ripeness tests, and handle sap carefully because fig latex can irritate skin and cause dermatitis.

6. Pick fresh-eating figs at the right firmness

For immediate eating, harvest when the fig is fully colored and soft but still holds its shape. Ripe figs bruise easily and deteriorate quickly, so place them in a shallow container rather than piling them deeply.

7. Leave drying figs on the tree longer

Figs destined for drying should become fully ripe and partly dry on the tree. Collect them as they begin to fall, then finish the process on trays or in a dehydrator. UC Agriculture and Natural Resources specifies about 60°C (140°F) and an endpoint of approximately 17% moisture for dehydrator or other drying processes.

8. Harvest gently and often

Hold the stalk and tear the fruit away, or use the lift-and-bend motion. During the ripening window, inspect the tree frequently because ripe fruit can soften, split, drop or attract wildlife within a short time. Pick sound fruit before it becomes overripe, and remove damaged fruit from the tree.

9. Protect your hands and crop

Protect skin from sap

Wear gardening gloves when harvesting or pruning. Wash exposed skin promptly if sap causes burning, redness or itching.

Keep birds and squirrels out

Use reusable bird netting held away from the canopy and kept taut. Netting that lies directly on the fruit can still allow animals to reach figs and may cause entanglement.

10. Plan for short storage

Eat fresh figs soon after picking. UC Davis Postharvest Research and Extension Center reported an optimum postharvest life of 1–2 weeks in air for California-grown Black Mission and Calimyrna figs in 1998; backyard results vary with cultivar, temperature, bruising and handling. Refrigeration and gentle handling can help, but no storage period is guaranteed for every tree.

Fresh, canning and drying: choose a different harvest point

End use Harvest cues Handling priority

When the harvest happens

Most fig trees produce a main crop near the end of summer, but there is no universal calendar date. Cultivar, climate, exposure and local weather determine the window. In very warm sites or greenhouses, a tree may produce two crops. Some cultivars also make an earlier breba crop on last season’s wood and a later main crop on current-season growth. Judge the fruit itself rather than relying on a date.

Why figs stay hard and green

  • They are immature: Hard texture, upright stems and latex at the cut stem indicate that more time is needed.
  • The cultivar stays green: Green skin does not automatically mean unripe; softness, droop and easy release matter more.
  • The crop is outside its normal conditions: Cool weather, limited sun, drought stress or excessive crop load can slow development.
  • The fruit was picked too early: Oregon State University Extension states that figs do not continue to ripen normally once picked, so a firm green fig may never reach tree-ripe quality indoors.

How to avoid common harvesting mistakes

  • Do not use skin color as the only test.
  • Do not yank fruit that resists the bend test.
  • Do not squeeze repeatedly; soft figs bruise under pressure.
  • Do not leave ripe fruit uninspected during hot, wet weather, when splitting and spoilage accelerate.
  • Do not handle latex with bare hands if you are prone to skin irritation.
