To make fall potpourri, combine fully dried flowers and fragrant herbs with dried citrus peel, warm spices and a small amount of fixative and essential oil. Seal the blend in a cool, dark place to cure; this recipe follows University of Georgia Cooperative Extension’s recommendation of about two months for the fragrance to develop.
Choose flowers and botanicals for scent and appearance
Rose and marigold petals make suitable flower choices, and lavender, violets, peonies, statice and strawflowers are other options listed by Nebraska Extension. For a stronger herbal note, use fragrant leaves such as rosemary, thyme, sage, lemon verbena or scented geranium.
Think of the blend as two kinds of ingredients: aromatic materials that contribute fragrance, and decorative additions that bring color and texture. Dried citrus peel, cinnamon sticks, cloves and allspice add warm seasonal character. Seed pods and small pine cones make the mixture look more autumnal, but are primarily visual accents. Use pesticide-free plant material.
Dry flowers completely before mixing
Moisture can make potpourri musty or moldy, so use only botanicals that are thoroughly dry. Spread petals and leaves in a single layer in a dark, ventilated place. North Carolina Cooperative Extension says drying commonly takes one to two weeks, but conditions and plant material affect the timing. Go by feel: petals and leaves should be crisp and no longer pliable.

Make a fall potpourri with a measured base
This baseline follows University of Georgia Cooperative Extension’s proportions. The orange peel, spices and decorative accents are fall additions supported by extension guidance, not a separately tested formula.
- 1 quart dried herb leaves
- 1 quart dried flowers or flower parts, such as rose or marigold
- 1 ounce fixative, such as orris root
- 5–10 drops essential oil
- Dried orange peel, cinnamon and cloves, plus seed pods or small cones as desired
- Combine the dried herbs, flowers, citrus peel and spices in a clean, nonmetallic container.
- Add the fixative and mix gently so it is distributed through the blend.
- Add essential oil sparingly, starting with a few drops, and stir or shake the mixture to distribute it.
- Cover tightly and store the container in a cool, dark place for about two months. Shake or stir it periodically while it cures.
Orris root is a traditional fixative: it helps absorb and release fragrance oils over time. Recipes use different proportions, so do not treat one measure as universal. University of Georgia Cooperative Extension specifies 1 ounce for its 1-quart-herbs-plus-1-quart-flowers recipe. UC Master Gardener Program of Sonoma County’s 2026 recipe uses about 2 tablespoons of orris root powder for 4 cups of dried material.

Choose a curing time that matches your recipe
Seasoning time varies among extension recipes, from about two weeks to about two months. North Carolina Cooperative Extension suggests about two weeks; Nebraska Extension says at least a month; Sonoma County’s 2026 recipe gives four to eight weeks; and the University of Georgia recipe calls for about two months. The fragrance develops during curing, so follow the timing for the recipe you are using rather than expecting every blend to be ready on the same day.
Store and present the finished potpourri
Use a sealed container while the blend cures. Glass is a practical choice: Nebraska Extension recommends glass for storing dried materials and notes that plastic or metal may interact with aromatic oils; University of Georgia advises using nonmetallic containers. Once cured, transfer the potpourri to a decorative lidded jar or arrange it in a sachet. Keep the container closed when you want to preserve the fragrance.

Handle essential oils and potpourri with care
