Set your household refrigerator to 40°F (4°C) or colder. For a practical target, USDA appliance-thermometer guidance uses 38°F to 40°F. Verify the cabinet with a freestanding appliance thermometer, because a dial or digital setting may not show the actual food temperature.
What temperature should my refrigerator be?
The food-safety ceiling is 40°F (4°C) throughout the refrigerator. Keeping the whole cabinet at or below that point slows the growth of bacteria that can cause foodborne illness. The U.S. Department of Agriculture’s Food Safety and Inspection Service (USDA FSIS) describes 38°F to 40°F as the range to look for when checking with an appliance thermometer.
Cold storage slows bacteria; it does not sterilize food. Some pathogens, including Listeria, can grow at refrigerator temperatures, so every refrigerated food still has a limited storage life.
Why 40°F matters
USDA FSIS calls 40°F to 140°F the “danger zone,” where many bacteria can multiply rapidly. Food can become unsafe without developing an unusual smell, taste or appearance, so a sensory check cannot prove that it is safe.

How to tell whether your fridge is cold enough
Use an appliance thermometer
FDA recommends an inexpensive freestanding refrigerator thermometer because few refrigerator controls display the actual internal temperature. A thermometer is also useful for spotting warm areas or a failing appliance.
Take a stable reading
- Place the thermometer in a glass of water in the middle of the refrigerator compartment.
- Leave it undisturbed for 5 to 8 hours.
- Read the temperature. USDA’s check range is 38°F to 40°F.
- If the reading is outside that range, adjust the refrigerator control according to the appliance manual.
- Allow the cabinet to stabilize, then repeat the measurement rather than judging the change immediately.
FDA guidance also recommends checking periodically, at least weekly, so a gradual temperature change is caught before it affects stored food.

Temperature and time rules that work together
A correct refrigerator setting cannot compensate for food left warm too long. Use these agency thresholds when handling perishables:

Cool large leftovers quickly
Divide soup, casseroles and other large quantities into shallow containers before refrigerating. Smaller, shallow portions release heat faster than a deep pot, reducing the time food spends in the rapid-growth range.

How to keep the refrigerator uniformly cold
- Do not overpack the cabinet; cold air needs room to circulate.
- Keep food covered or sealed.
- Wrap or seal raw meat, poultry and seafood so their juices cannot contaminate other food.
- Clean spills promptly.
- Keep the refrigerator and freezer doors closed as much as possible during a power interruption.
What to do during a power outage
Outage decisions depend on both temperature and elapsed time. FDA says an unopened refrigerator keeps food cold for about four hours and advises discarding refrigerated perishables that have been above 40°F for four hours or more. Separately, USDA’s refrigerator-safety page says food held above 40°F for more than two hours should not be consumed. These are agency-specific statements with different wording and context, not a single combined formula.
If you have an appliance thermometer or a reliable temperature reading for the food, use it to inform the decision. When the relevant time or temperature limit has been exceeded, do not taste the food to test it; discard the perishable item.

Is 40 degrees cold enough for a fridge?
Yes. 40°F (4°C) is the food-safety upper limit cited by FDA and USDA FSIS. Operating near 38°F gives additional margin for normal temperature variation, but the measured temperature—not the number printed on a control—is what tells you whether the refrigerator is doing its job.

FDA’s refrigerator-thermometer guidance states that the freezer should be kept at 0°F. That is a separate freezer target; it does not change the refrigerator’s 40°F ceiling.
