The Zeer Pot: How It Works, How to Make One, and Its Limits

A zeer pot uses damp sand and porous clay to cool an inner chamber by evaporation. Learn how it works, how to build one, and why measured temperatures matter for food safety.

A zeer pot is a simple evaporative cooler made by nesting a smaller pot inside a larger porous pot and keeping the space between them damp. As water evaporates through the outer pot, it carries heat away and cools the inner chamber. It can help keep some produce cooler in suitable conditions, but it is not a dependable substitute for a refrigerator for perishable foods.

How a zeer pot cools

The traditional pot-in-pot design uses two clay or terracotta pots of different sizes. The smaller pot sits inside the larger one; wet sand fills the gap between them. Water moves through the porous outer pot and evaporates from its surface. Evaporation draws heat from the pot and its contents, lowering the inner chamber’s temperature. A lid or damp cloth can cover the top.

The principle is the same as other forms of evaporative cooling: water must evaporate into surrounding air for cooling to occur. Dry air and airflow help; humid air limits evaporation. Shade, adequate water, and an outer pot that is genuinely porous also matter. Not every decorative terracotta pot will work equally well.

How much cooler does it get?

There is no single temperature a zeer pot will reach. Engineering for Change’s profile, updated in 2024, describes typical performance as about 10–15°C below ambient temperature (Engineering for Change). A 2018 paper by Chemin and colleagues reports a typical reduction of 5–20°C for pot-in-pot coolers (American Association of Physics Teachers paper). These are conditional descriptions, not guarantees: the result varies with humidity, airflow, water supply, pot materials, and local conditions. A temperature below the surrounding air is not necessarily refrigerator-cold.

How to assemble a basic pot-in-pot cooler

  1. Choose two pots: Use a porous outer clay pot and a smaller inner pot that leaves room for fill around the sides and base. Check the fit and usable capacity; decorative coatings or finishes may affect porosity.
  2. Set the inner pot in place: Center it inside the outer pot so the gap is reasonably even. A small amount of sand beneath the inner pot can help position it.
  3. Fill the gap: Add clean sand between the pots, including around the base, without blocking the inner pot’s opening.
  4. Wet the sand: Add water until the fill is damp throughout. Keep it damp as it dries; the cooler needs water to evaporate.
  5. Cover and position it: Use a lid or damp cloth over the opening. Place the cooler in shade where air can circulate around the outer surface, rather than in an enclosed, stagnant spot.
  6. Measure the result: Put a thermometer in the inner chamber and check it over time under the conditions in which you plan to use the cooler. Refill water as needed.

When choosing among designs or materials, consider outer-pot porosity, fit and capacity, local availability, fill material, water access, airflow, humidity, and measured interior temperature and humidity.

What it can—and cannot—do for food

MIT D-Lab and its partners have studied clay pot coolers for fruit and vegetable storage in particular contexts. The project page reports that 98% of training participants said they wasted less food; that is a participant response, not a controlled estimate of the device’s causal effect for all users (MIT D-Lab’s clay pot cooler research). A related Mali report discusses postharvest losses of fruits and vegetables and the project’s work; those figures should not be read as proof that a cooler alone prevents losses (MIT D-Lab’s 2016–2021 Mali report). Produce results depend on the crop, climate, handling, and use.

Do not assume a zeer pot keeps meat, dairy, eggs, cooked leftovers, or other temperature-sensitive foods safe. FoodSafety.gov advises keeping a refrigerator at 40°F (4°C) or below, and says perishable food should not remain in the 40–140°F (4–60°C) danger zone for more than two hours, or one hour when temperatures exceed 90°F (32°C) (FoodSafety.gov’s food-safety guidance). Because a zeer pot’s temperature is variable, use a thermometer and follow official food-safety time and temperature guidance; if it cannot maintain the required temperature, do not use it to store those foods.

When a zeer pot makes sense

  • Consider one where the air is relatively dry, water is accessible, and you want a low-tech way to cool or store suitable produce.
  • Expect less cooling in humid weather, with little airflow, or when the sand dries out.
  • Choose another method for foods that need reliable refrigeration, or whenever measured temperatures do not meet food-safety requirements.
