The Ultimate Guide to Hügelkultur Raised Beds: How to Build One and What to Expect

Hügelkultur beds use woody material beneath soil and compost, but the method has trade-offs. Learn how to build one and what to monitor.

A hügelkultur raised bed places logs, branches and other woody material beneath a soil-and-compost planting layer. It can make use of yard debris and reduce the amount of purchased soil, but the bed will settle and still needs watering and monitoring. Extension guidance differs on whether buried wood reliably improves growing conditions, so treat it as an option—not a guaranteed way to save water or increase yields.

What hügelkultur is—and what makes it a raised bed

Hügelkultur means “mound culture” or “hill culture.” In the traditional form, gardeners shape woody material and organic matter into an open mound, then cover it with soil. A framed-bed adaptation puts logs, branches and twigs at the bottom of a raised-bed structure, with compost and planting soil above them. Oklahoma State University Extension describes both the method and this framed adaptation in its February 2026 guidance.

The key feature is the buried woody layer beneath a planting layer. A frame is optional: use one if you want defined bed edges or a contained planting area; an open mound needs no purchased structure. For a framed bed, depth matters because roots need a substantial layer of suitable growing medium above the wood.

Is a hügelkultur bed worth building?

Extension guidance describes possible advantages: reusing woody debris, buying less soil, retaining water as wood decomposes, and creating a raised or mounded growing area. Oklahoma State notes that capturing runoff and providing passive irrigation depend on placement and construction. These are potential outcomes, not guarantees for every site or bed.

The strength of the evidence is disputed. A March 4, 2026 Ask Extension response says horticultural research has not supported hügelkultur and cautions that putting coarse material beneath finer soil can create a perched water table that stresses roots. The response also warns that microbes decomposing wood may draw nitrogen from nearby soil. Washington State University Extension’s indexed summary likewise says there is no science-based evidence that hügelkultur optimizes woody-debris benefits and raises a concern about excessive nutrient release; that summary should not be taken to establish more than those stated points.

The sources reviewed do not provide a controlled comparison showing reliable yield gains or irrigation savings for hügelkultur raised beds. Oklahoma State advises watering during establishment, watching for nitrogen deficiency and topping up soil as the bed settles. Do not plan on a “self-watering” bed or assume it will eliminate irrigation.

Choose between an open mound and a framed bed

Structure cost No purchased frame is necessary. Frame cost depends on the structure selected; no specific price is established by the cited guidance.

Oklahoma State’s 17-inch minimum is a construction recommendation, not a comparative study result. If you do not have enough depth to keep roots in soil and compost, use a conventional fill rather than crowding the root zone with wood.

Plan the site and bed structure

  • Sun: Most vegetables need about six to eight hours of sunlight, according to Oklahoma State. South Dakota State University Extension says most vegetables need about eight hours, while salad greens can manage with less.
  • Ground and drainage: South Dakota State advises placing beds on level ground and avoiding low spots where water stands after rain. Site conditions matter because drainage problems can undermine the root zone.
  • Water access: Choose a location where you can water during establishment and as conditions require. UNH Extension notes that raised beds can be easy to underwater and identifies drip irrigation as an efficient option.
  • Dimensions: For the framed adaptation, follow Oklahoma State’s recommendation of at least 17 inches of bed height and reserve about half the depth for soil and compost above the woody layer.

UNH Extension describes a more limited way to borrow from the method: put logs or sticks at the bottom of a tall bed, then cover them with a mix of 70% topsoil and 30% high-quality compost. Its raised-bed guidance offers a soil-and-compost approach without suggesting that every bed needs a deep woody core.

Build the framed version

  1. Set the frame on a suitable site. Choose a level location with appropriate sun and access to water; avoid a spot where water routinely stands.
  2. Gather woody material. Use logs, branches and twigs for the lower layer. South Dakota State University Extension says not to use freshly cut wood. Its regional guidance also lists black walnut, hackberry, cottonwood, red oak, sugar maple, American elm and black locust as trees to avoid. Tree guidance varies by region, so check local extension advice before using unfamiliar species.
  3. Fill roughly the lower half with wood and organic material. Oklahoma State recommends using about the lower half of a framed bed for logs, branches and other hügelkultur material. South Dakota State describes layering old logs and sticks with leaves, mulch, compost, straw or other organic matter, and recommends packing nitrogen-rich organic matter around the wood.
  4. Cover the woody fill with planting soil and compost. Leave enough suitable soil above the wood that roots do not grow into the woody layer. Keep the root zone consistent with the crops you plan to grow.
  5. Plant and water as needed. Water plants during establishment. Watch plants for signs of nitrogen deficiency in the first few seasons; Oklahoma State suggests legumes or supplemental fertilizer as possible responses.
  6. Top up as the bed settles. Decomposition reduces the volume of the buried material. Oklahoma State says additional soil or compost may be needed each year until much of the organic fill has decomposed.

Should you bury fallen leaves?

The March 2026 Ask Extension response advises against burying fallen leaves and recommends leaving them on the soil surface as mulch. It says compost and topsoil provide more uniform material for above-grade planting and better root growth. This is the responding expert’s recommendation, not a universal consensus across every extension source. If leaves are part of your plan, consider using them as surface mulch rather than relying on a buried leaf layer for drainage or bed structure.

Choose the woody method if reusing suitable material is valuable and you are comfortable monitoring settlement, nutrients and water. Choose a soil-and-compost fill if you want a more uniform root zone or prefer to avoid the uncertainties around buried coarse material.
