The Essential Tools for Homemade Pizza: What You Need and What You Don’t

You can make homemade pizza with basic kitchen tools. Learn which upgrades improve crispness and handling—and which specialist equipment you can skip.

You can make homemade pizza without specialist equipment. Start with a kitchen scale, parchment, a mixing bowl and an oven-safe baking sheet—or the surface your recipe calls for. A pizza steel or stone and a peel are useful upgrades for hotter, crisper bases and easier handling, but they are not prerequisites.

What you need to get started

Keep the first setup simple. A beginner recipe may work with ordinary kitchen equipment; King Arthur Baking’s June 2026 beginner’s guide recommends a kitchen scale and parchment as useful starting tools, and includes approaches that use a sheet pan or cast iron rather than a stone or steel.

  • Kitchen scale: Weighing ingredients helps you follow recipes that specify amounts by weight.
  • Mixing bowl and ordinary utensils: Use what you already have to mix and prepare the dough.
  • Baking sheet or recipe-specified pan: A sheet pan can provide an oven-safe baking surface; an inverted sheet pan may also help with transferring a pizza when the recipe and handling method allow.
  • Parchment: A convenient aid for moving dough to the oven, especially while you are learning to handle a peel or launch a pizza directly.

A bowl scraper is a practical extra for moving and dividing sticky dough, but it is not essential if a spatula or other kitchen tool does the job.

Does a pizza need a stone or steel?

No. A steel or stone is an optional upgrade, not a requirement for homemade pizza. It provides a hot surface that transfers heat to the underside of the dough. King Arthur Baking’s July 17, 2026 comparison says both materials work, while steel transfers heat faster and can brown the base more quickly for a crisper crust.

If you decide to buy a steel or stone, King Arthur’s comparison favors a rectangular slab where it fits: it can make more of the oven area usable than a round one. Measure your oven and allow enough clearance for safe placement and handling; the source does not establish dimensions or fit for particular models.

When a pizza peel is worth it

A peel helps you load, retrieve and turn a pizza, so it becomes more useful as you make pies on a steel or stone. The right choice depends on how you plan to launch the dough and how comfortable you are handling it:

  • Use parchment for a straightforward transfer while learning. Follow the recipe’s temperature and parchment guidance.
  • Use a peel when you want a reusable way to move pizza onto and off a hot baking surface. Metal and wooden peels are both included in King Arthur Baking School’s Homemade Pizza Workbook equipment checklist.
  • Use a sheet pan when the recipe is designed for one or when it makes handling easier. It avoids the need to launch a free-standing pie.

These are alternatives, not a checklist of items to buy together. Match the transfer method to the recipe and the baking surface.

How to preheat a steel or stone

Preheating the baking surface along with the oven gives it time to store heat. King Arthur Baking’s July 2026 comparison recommends at least one hour of preheating for the oven and steel or stone together. It suggests using an infrared thermometer to check for a surface temperature of at least 500°F and allowing about five minutes for heat recovery between pizzas. These are that source’s technique recommendations; oven performance and individual recipes vary.

For a specific example rather than a universal rule, King Arthur’s New York-Style Pizza Recipe calls for heating the oven to 500°F for at least an hour with the steel or stone inside. It also cautions that oven results vary. Use the instructions and visual cues for the recipe you are making rather than assuming every dough needs the same temperature or timing.

Tools for particular pizza styles

Detroit-style and other pan pizzas

A dark anodized pan is a style-specific option King Arthur points to for Detroit-style and similar pan pizzas. Cast iron is another route for recipes designed around a pan; that method can make a separate steel or stone unnecessary.

Outdoor pizza ovens

A high-heat outdoor oven is an advanced, higher-investment choice, not a basic requirement. Consider it only if you want that style of cooking and have the space and setup for outdoor use. King Arthur’s June 2026 guide describes the Gozney Arc as capable of up to 900°F; treat that as the guide’s description, not an independently verified specification for every model or setup.

A sensible buying order

  1. Make a few pizzas with what you have. Start with a scale, parchment and an oven-safe surface suited to your recipe.
  2. Add a steel or stone if you want a crisper base. Choose based on oven fit, handling and the heat-transfer trade-offs above.
  3. Add a peel if loading the hot surface is awkward. Parchment or a sheet-pan method may be easier for your recipe and experience level.
  4. Buy style-specific equipment only for a style you make regularly. A pan or outdoor oven solves a narrower need than basic kitchen tools.

For dough-specific methods, King Arthur also offers an Artisan No-Knead Pizza Crust Recipe; follow its equipment and baking directions rather than assuming one setup fits every dough.
