For most home cooks, the best high-end knife set is not the one with the most pieces. A useful premium block should begin with a chef’s knife, paring knife, and bread knife, then add only the tools you will actually use. On that basis, the Shun Premier 7-Piece Essential Block Set is the strongest premium Japanese pick; the ZWILLING Pro 7-Piece Knife Block Set is the most practical German-made option; the MIYABI Birchwood SG2 7-Piece Knife Block Set is the luxury choice; and the WÜSTHOF Classic Ikon is the traditional German alternative, subject to a final availability check.
This guide uses product specifications from the manufacturers and testing coverage from Good Housekeeping, Bon Appétit, Good Food, and Which?. The sets were not physically tested by this publication, so performance conclusions are attributed to those independent outlets rather than presented as firsthand results.

How to choose a high-end knife set
Start with the three knives that cover most cooking
Bon Appétit’s 2026 testing-based guidance recommends beginning with three essentials: a chef’s knife, a bread knife, and a paring knife. Good Food makes a similar task-based argument: choose a set around the jobs you perform, rather than paying for a large assortment because the piece count looks impressive.
A chef’s knife handles most chopping, slicing, and dicing. A serrated bread knife cuts crusty loaves and delicate baked goods without requiring the same slicing pressure as a straight edge. A paring knife is useful for small produce, trimming, and detail work. If a set covers those three jobs well and fits your maintenance habits, it may be a better purchase than a 15-piece block containing several knives that remain unused.
#1 Best Overall
- Multipurpose Knife Set: This kitchen knives set includes 8" Chef Knife, 8" Slicing Knife, 7" Santoku Knife, 8" Serrated Bread Knife, 5" Utility Knife, 3.5" Paring Knife, Kitchen Shears and 6 pcs Blade Guards
- Anti-rust coating: The healthy anti-rust coating protects the knife from oxidation and dishwasher safe, while the non-stick coating ensures the blades stay clean all day long
- Easy to carry: Each knife comes with a blade guard for safe, compact storage in your kitchen cupboard. These knives are also easy to carry when camping or storing in your RV
- Perfect Holiday Gift: Ideal for kitchen enthusiasts or new cooks, this knife set meets all cooking needs. It makes an excellent holiday gift for family, friends, lover and colleague
- Lifetime Warranty: Every knife set is backed by rigorous quality inspection, we provide a lifetime warranty for every customer, ensuring superior customer service and peace of mind with every purchase
Specialty pieces become worthwhile when they match your cooking. A santoku may appeal to someone who prefers a shorter, more compact Japanese profile. A prep knife can bridge the gap between a paring knife and a chef’s knife. A honing steel can help maintain an appropriate edge on compatible blades, but it does not replace sharpening. A meat fork, kitchen shears, or extra utility knife is valuable only if it will leave the block regularly.

German-style and Japanese-style knives are useful design categories, but neither automatically suits every cook. German-oriented sets generally appeal to people who prefer a more substantial knife and a rocking motion. Japanese-oriented sets often appeal to cooks who prefer a thinner, more precise-feeling profile and a push-cutting style. Grip, hand size, cutting technique, food preparation, and maintenance matter as much as the label.
A premium set should therefore be judged on useful coverage, blade construction, handle geometry, bolster shape, balance, storage, and care requirements. “Sharper” is not a sufficient buying criterion: edge geometry, steel hardness, sharpening quality, and how the knife is used all affect the ownership experience.
Do not confuse more pieces with better value
A block contributes useful storage and keeps knives visible and separated from one another. It can also provide room for future additions. But unused slots are not a performance benefit, and a large block takes more counter space. Before buying, list the knives already in your kitchen and identify which included pieces would genuinely replace them.
Independent testing: what the reviews actually establish
Good Housekeeping’s 2026 coverage describes side-by-side knife-set testing by its kitchen experts and includes brands such as Shun and Wüsthof. Good Food’s 2026 review says its team put knife sets through their paces and evaluates them around practical kitchen tasks. Which? reports testing knife sets for sharpness and comfort. Bon Appétit’s 2026 test-kitchen guidance is especially useful for deciding how many knives most home cooks need.
That evidence supports the buying framework in this guide, but it does not justify inventing a universal sharpness ranking or claiming that every knife in one set outperforms every knife in another. The product-specific material below separates manufacturer specifications from independent testing coverage.
1. Shun Premier 7-Piece Essential Block Set: best premium Japanese set
Best for: Cooks who want a refined Japanese-style collection focused on essential knives rather than a large block.
The Shun Premier 7-Piece Essential Block Set is the clearest fit for a buyer who values a curated premium set. Shun describes it as an essentials-oriented collection housed in a bamboo block, while Good Housekeeping included Shun among the brands covered by its 2026 kitchen-expert knife-set testing.
The key advantage is the concept: the set is designed around the knives most likely to earn regular use, rather than trying to fill every block slot with specialty tools. That makes it easier to recommend to a home cook who wants Japanese styling and premium presentation without committing to an oversized assortment.

Shun is the strongest choice here when the buyer’s priority is a compact Japanese set with a coordinated block. It is not automatically the right choice for someone who prefers the heavier feel of a traditional German knife or who wants a broad selection for carving and specialized prep.
Before buying, check the current retailer listing for the Shun Premier 7-Piece Essential Block Set. The exact included pieces, price, seller, stock status, and return terms should be confirmed because the research verified the manufacturer’s product page but not a dependable live retailer offer.
- Why buy it: Essentials-focused format, Japanese styling, and a bamboo storage block.
- Who should skip it: Buyers who want a large specialty assortment or a more substantial German-style profile.
- Verify first: Current contents, retailer authorization, price, availability, and return policy.
2. ZWILLING Pro 7-Piece Knife Block Set: best practical German-made set
Best for: Home cooks who want a conventional assortment, German manufacture, and included maintenance tools without moving to a very large block.
The ZWILLING Pro set has one of the clearest configurations in the group. The official listing specifies a 4-inch paring knife, 5.5-inch prep knife, 8-inch bread knife, 8-inch chef’s knife, kitchen shears, sharpening steel, and a 16-slot hardwood block.
That combination covers the core jobs while adding a prep knife and maintenance tool. The 16-slot block also leaves expansion room, which is useful for a cook who expects to add a boning knife, carving knife, or another specialty blade later. Empty capacity should be treated as flexibility, not as evidence that the set is better made or sharper.
ZWILLING says the knives are forged from a single piece of high-carbon stainless steel and made in Germany. The company also describes a curved bolster intended to support a professional pinch grip. Those are manufacturer specifications and design intentions; they should not be confused with independent proof that the set will feel comfortable in every hand.
The ZWILLING Pro is the most straightforward recommendation for someone who wants a complete-feeling block without buying a large 15- or 20-piece collection. Its profile is likely to appeal to cooks who prefer a more substantial German-style knife and a rocking motion, while cooks accustomed to thin Japanese blades may prefer one of the Shun or MIYABI options instead.
- Why buy it: Useful seven-piece assortment, German manufacture, hardwood block, and included sharpening steel.
- Who should skip it: Buyers seeking the lightest or thinnest Japanese-style cutting profile, or those unlikely to use a prep knife and honing steel.
- Care point: Follow ZWILLING’s knife-use and care guidance for storage, washing, honing, and sharpening.
3. MIYABI Birchwood SG2 7-Piece Knife Block Set: best luxury Japanese set
Best for: Buyers who want premium materials, Damascus presentation, Japanese manufacture, and are willing to pay for a high-maintenance luxury set.
The MIYABI Birchwood SG2 is the most specification-heavy and expensive set in this comparison. The official listing displayed a price of $1,399.99 at the time of research and identifies a seven-piece configuration: a 3.5-inch paring knife, 7-inch santoku, 8-inch chef’s knife, 9-inch bread knife, kitchen shears, 9-inch sharpening steel, and a 12-slot bamboo block.

MIYABI describes an SG2 micro-carbide powder-steel core, 101-layer Damascus construction, a hand-honed edge between 9.5 and 12 degrees, Rockwell 63 hardness, and manufacture in Seki, Japan. These are official product claims and specifications. They explain why this is a luxury purchase, but they do not by themselves prove that every cook will cut faster, feel more comfortable, or prefer this set to a less expensive alternative.
The configuration is practical as well as decorative. It includes both a santoku and chef’s knife, a bread knife, a paring knife, shears, and a sharpening steel. The trade-off is that some buyers may be paying for two primary cutting profiles when one would have been enough. A cook who already knows that they prefer either a santoku or a chef’s knife may get better value from a smaller collection of individual knives.
MIYABI’s official listing specifies hand-wash-only care. That requirement should be treated as central to the buying decision, not as a footnote. A high-hardness, thin Japanese blade and a decorative bamboo block reward careful ownership; they are a poor match for someone who wants to put every knife in the dishwasher or leave blades loose in a drawer.
- Why buy it: Premium SG2 steel claim, Damascus construction, Japanese manufacture, refined presentation, and a broad but still seven-piece configuration.
- Who should skip it: Buyers who want low-maintenance knives, a modest budget, or only one primary chef’s knife style.
- Care point: Hand wash and dry it, use appropriate storage, and follow the manufacturer’s sharpening guidance.
4. WÜSTHOF Classic Ikon: best traditional German alternative
Best for: Cooks who want a forged German-style collection with more specialized pieces than the ZWILLING seven-piece set provides.
WÜSTHOF’s Classic Ikon series represents the traditional premium German block-set approach. The series page lists nine- and ten-piece block sets and describes the line as forged cutlery with ergonomic black handles.
The official ten-piece listing includes a peeling knife, paring knife, serrated utility knife, utility knife, santoku, chef’s knife, bread knife, meat fork, honing steel, and a nine-slot block. That is a broader assortment than the ZWILLING Pro configuration and may suit a cook who regularly uses several specialized knives, prepares larger meals, or wants a meat fork and multiple utility options.
The same breadth can make it less efficient for a minimalist kitchen. It contains both a santoku and chef’s knife, plus several smaller or specialized blades. If the buyer mainly chops vegetables, slices bread, and handles small trimming tasks, the extra pieces may add cost and storage demands without adding much daily usefulness.

The WÜSTHOF pages reviewed were not fully consistent: one product page showed an out-of-stock state while the series page displayed active set listings. Do not rely on a generic “in stock” statement or assume that every retailer is selling the same nine- or ten-piece configuration. Confirm the exact model, included pieces, price, and stock immediately before purchase.
- Why buy it: Forged German construction, substantial traditional design, and a broad specialist assortment.
- Who should skip it: Buyers who want a compact essentials set or who will not use the extra utility and carving pieces.
- Verify first: Exact configuration and current stock; WÜSTHOF’s listings require a final prepublication or pre-purchase check.
Japanese versus German knife sets
| Consideration | Japanese-oriented sets | German-oriented sets |
|---|---|---|
| Typical appeal | Thin profiles, precision-focused cutting, refined finishes, and specialty steels or layered construction | Substantial feel, versatile Western profiles, forged construction, and rocking-oriented use |
| Best fit | Cooks who value precision and are comfortable with careful maintenance | Cooks who want an all-purpose workhorse feel and a conventional block assortment |
| Examples here | Shun Premier and MIYABI Birchwood SG2 | ZWILLING Pro and WÜSTHOF Classic Ikon |
| Potential trade-off | Some thin or hard blades may demand more careful handling and sharpening | Broader, heavier sets can include more knives than a minimalist cook needs |
These are tendencies rather than rules. The individual knife’s geometry, steel, edge, bolster, handle, and intended use matter more than a country label alone. If possible, handle a comparable knife before committing to an expensive block.

Care, honing, sharpening, and storage
Hand wash premium knives unless the maker explicitly says otherwise
Hand washing and immediate drying are the safest default for premium kitchen knives. MIYABI specifically lists the Birchwood SG2 set as hand-wash-only. Even when a manufacturer permits dishwasher cleaning for a particular model, hand washing reduces exposure to heat, detergent, movement, and contact with other utensils.
Use the honing steel correctly
A honing steel realigns or maintains an existing edge; it does not remove enough metal to replace periodic sharpening. Use an included steel only when it is appropriate for the particular blade and in accordance with the manufacturer’s instructions. An aggressive or unsuitable steel can damage a thin Japanese edge, especially on a hard blade.

One-click scans. No signup required.
ZWILLING and MIYABI include sharpening steels in the configurations described above, and WÜSTHOF’s ten-piece listing includes a honing steel. That inclusion is convenient, but it does not make the set maintenance-free. If the correct angle or technique is uncertain, a professional knife sharpening service is a sensible future maintenance option; provider quality, geography, and pricing should be verified separately.
Store blades separately from loose utensils
Use the supplied block or another protective storage system. Loose knives in a drawer can strike one another, dull their edges, and create a safety hazard. Keep the block dry and place it where knives can be removed without twisting the blade against adjacent slots.
Keep knives within their intended jobs
Do not use kitchen knives to cut frozen food, bones, or materials outside their intended tasks. High-hardness, thin Japanese blades, Damascus-finished blades, and premium forged knives should be treated as precision tools rather than indestructible household implements.
Which set should you buy?
Choose Shun Premier if you want a premium Japanese set organized around essential knives and prefer a compact, carefully presented block.
Choose ZWILLING Pro if you want the most practical conventional assortment: chef’s, bread, paring, and prep knives, plus shears, a sharpening steel, and expansion space.
Choose MIYABI Birchwood SG2 if the materials, Damascus appearance, Japanese manufacture, thin edge specification, and luxury presentation justify a roughly $1,400 purchase and hand-washing routine.
Choose WÜSTHOF Classic Ikon if you prefer a broad German block with multiple utility knives, a santoku, meat fork, and traditional forged construction—after confirming the exact configuration and stock.

Frequently Asked Questions
How many knives should a high-end set include?
For most home cooks, a set with a chef’s knife, bread knife, and paring knife is enough. Add a santoku, prep knife, shears, or other specialty piece only when your cooking regularly requires it. A larger block is not automatically better value.
Are Japanese or German knife sets better?
Japanese-oriented sets such as Shun and MIYABI often appeal to cooks who prefer thinner, precision-focused profiles and are willing to maintain them carefully. German-oriented sets such as ZWILLING and WÜSTHOF generally appeal to cooks who prefer a more substantial feel and rocking-oriented use. These are design tendencies, not universal performance rules.
How should premium kitchen knives be maintained?
Hand wash and dry premium knives unless the manufacturer explicitly permits dishwasher use. MIYABI specifically lists the Birchwood SG2 set as hand-wash-only. Store knives in their block or another protective system, and avoid cutting frozen food, bones, or other materials outside the knife’s intended use.
Does the included sharpening steel replace sharpening?
A honing steel can help maintain or realign an appropriate existing edge, but it does not replace periodic sharpening. Use a steel only when it is suitable for the specific blade and follow the manufacturer’s guidance; an unsuitable or aggressive technique can damage thin Japanese edges.
How much does the MIYABI Birchwood SG2 set cost?
The official MIYABI listing displayed $1,399.99 at the time of research. That is a timestamped reference, not a guaranteed current price. Check the manufacturer or retailer listing before purchase, along with stock, seller, included pieces, and return terms.
The Bottom Line
Bottom line: Buy the Shun Premier for a premium Japanese essentials block, the ZWILLING Pro for the most practical German-made seven-piece set, the MIYABI Birchwood SG2 for luxury materials and presentation, or the WÜSTHOF Classic Ikon for a broader traditional German assortment. The right choice is the set whose core knives, profile, storage, and maintenance requirements match your actual cooking—not the set with the highest piece count.
