For hard Japanese blades, choose the Messermeister 12-inch fine 1200-grit ceramic rod instead. The Victorinox Fibrox 10-inch and Henckels 9-inch are lower-cost steel options, while the Shun Sora 9-inch Combination Honing Steel is useful if you want built-in angle guidance.
These are honing tools, not interchangeable sharpeners. A smooth or fine steel mainly realigns a slightly rolled edge; ceramic removes a small amount of metal; diamond removes metal fastest and is better treated as light sharpening or edge repair.

What a honing steel actually does
Conventional steel
Repeated cutting can bend a fine edge out of alignment while leaving much of the metal intact. A fine steel nudges that edge back into line. It does not repair chips, remove substantial wear or restore a genuinely dull bevel. WÜSTHOF’s guidance says that a few strokes on both sides maintain the sharpness of a good blade.
#1 Best Overall
- Premium Steel Construction - The steel rod is made of carbon steel and plated with nickel-chrome; the fine surface of the steel rod prevents the cutting edge from damage when sharpening.
- Versatile Compatibility - Our knife sharpening steel rod is for all types of knives, including kitchen, household, sporting and pocketknives; sharpens standard and serrated edge knives. Restores dull knives to razor-sharp perfection with ease.
- Ergonomic Non-Slip Grip - Easy to use, with an ergonomic handle that fits your hand, be it right or left. The slip-resistant rubber bottom makes the rod easy to handle and firmly stays in place during use.
- Hanging Loop for Storage - Convenient design for easy access and space-saving storage.
- Effortless Maintenance - Use a non-woven cloth soaked with cooking oil to wipe the body and dry it. If washed with water, be sure to wipe the rod dry completely and hang in a cool place to air-dry. Do not put the sharpener into the dishwasher.
Ceramic
Ceramic combines alignment with light abrasion. That makes a fine ceramic rod more suitable than grooved steel for many hard Japanese knives, while still being gentler than a diamond rod. Its downside is brittleness: store it where it cannot fall or be struck.
Diamond
Diamond-coated rods remove metal quickly. Use one sparingly as light sharpening or repair, not as an everyday substitute for a fine honing steel. WÜSTHOF recommends diamond or ceramic when a blade is particularly blunt.

How to choose the right rod
Match the rod to blade hardness
- Softer German and Western knives: choose a fine steel such as the WÜSTHOF, Henckels or Victorinox.
- Hard Japanese knives around 60 HRC and above: prefer a fine ceramic rod. The cited comparisons warn that aggressive grooves can damage these edges.
- Very dull or damaged edges: use a proper sharpening system or service; a honing pass cannot recreate missing metal.
Match length to the blade
Choose a rod at least as long as your longest knife blade. A 10-inch rod comfortably covers an 8-inch chef’s knife; a 12-inch model gives better reach on slicers and long gyutos. A rod that is too short forces awkward contact near the tip.
Check control and edge angle
A substantial guard and secure handle reduce the chance of sliding onto the rod. If you are unsure about angle, the Shun Sora’s molded guide is designed around Shun’s 16-degree edge. Otherwise, set the blade at its existing bevel rather than guessing a new angle.

Reviews of the five recommended honing steels
1. WÜSTHOF 10-inch Honing Steel — best overall
The 10-inch fine-cut magnetic steel is the most balanced choice for everyday German and Western kitchen knives. It is long enough for common chef’s knives, and its fine surface is intended to realign rather than grind away an edge. WÜSTHOF lists SKU 3049700726, Germany as country of origin and a $60 price on the product page accessed September 28, 2026. The Edge Bench ranked it best overall with an 8.5/10 score, while noting that its ranking was based on specifications and rubric rather than hands-on testing.
2. Henckels 9-inch Sharpening Steel — best value
This fine 9-inch rod handles the daily realignment job on softer Western knives at a lower-cost, compact size. It is especially practical for smaller hands or knives shorter than a standard chef’s knife. Its shorter reach is the trade-off when you routinely hone long slicers.

- Wüsthof sharpening steel; 9-inch rod length
3. Victorinox Fibrox 10-inch Honing Steel — budget pick
The Victorinox combines a useful 10-inch length with the brand’s non-slip Fibrox handle. Gyuto Club positions it for Victorinox and similar soft-steel Western knives, making it a sensible inexpensive maintenance tool when you do not need ceramic abrasion or an angle guide.

4. Messermeister 12-inch Ceramic Sharpening Rod — best for hard Japanese knives
The fine 1200-grit ceramic surface lightly abrades hard edges instead of merely bending them back. Gyuto Club identifies it as the Japanese-knife choice, and Pura Vida by Brandt reports using it on VG-10 and SG2 knives above 61 HRC. The 12-inch length suits long blades, but handle the rod carefully because ceramic can fracture if dropped.

This 9-inch combination rod offers a smooth face for frequent maintenance and a micro-ribbed face for a more aggressive weekly pass. Independent reader supportYour contribution helps us test, update, and keep practical guides available for everyone. How to hone safely and effectively
- Confirm that the rod is at least as long as the knife blade and that the handle guard is between your hand and the edge.
- Hold the rod vertically with its tip resting on a stable counter. This is more controlled than waving both tools in midair.
- Place the heel of the knife against the rod at the blade’s existing edge angle.
- Draw the knife down and across the rod in one light motion toward the tip.
- Repeat on the opposite side for a few alternating passes. Use light pressure; forcing the blade can roll or scratch the edge.
- Wipe the blade and test it on food or paper. If it remains dull, stop honing and sharpen the bevel with an appropriate stone, guided system or professional service.
Which one should you buy?
Buy the WÜSTHOF 10-inch if you maintain ordinary German or Western kitchen knives and want one dependable general-purpose rod. Select the Messermeister 12-inch ceramic model for hard Japanese steel, especially VG-10 or SG2 blades. Choose Henckels or Victorinox when price and straightforward Western-knife maintenance matter most. Pick the Shun Sora when maintaining a 16-degree Shun edge consistently is your priority.
