First assess an existing cool room; build a dedicated cellar only if you need one. Temperature, humidity, ventilation, drainage, access, and pest protection all matter—and different crops need different conditions.
Start with the crops and the space you have
List the crops and approximate quantities you expect to store. Then check whether an existing space can meet their needs through the season. A root cellar does not have to be underground: an unheated room, closet, entryway, basement, crawlspace, shed, or garage may work for some crops if its conditions are suitable.
University of Maine Cooperative Extension recommends considering temperature, humidity, accessibility, and ventilation when choosing a space. Access matters in winter, too: an outdoor cellar may be difficult to reach when snow-covered. Measure conditions before committing to construction; a room that feels cool may still be too warm, too dry, or poorly ventilated for the crops you plan to store. Maine Extension’s root-cellar guidance discusses assessing and using available spaces.
Match storage conditions to each crop
There is no single temperature and humidity setting that preserves every crop. The figures below are published guidance, not guarantees for every variety or household cellar. Harvest maturity, handling, local climate, and actual storage conditions affect results.

Missouri Extension’s crop-specific recommendations are available in Vegetable Gardening: Storing Vegetables. Alaska Extension describes 32–40°F as the optimum range for most vegetables and 80–95% humidity as helpful in preventing vegetables from drying out, while noting that onions and squash prefer drier storage. Its figures reflect regional guidance, not a universal prescription. See Vegetable Storage in Root Cellars.
Separate crops with conflicting needs
Keep high-humidity root vegetables apart from crops that prefer drier conditions, such as onions, garlic, pumpkins, and winter squash. Missouri Extension also advises against storing apples with vegetables or potatoes with fruit. Separate areas, shelves, or storage containers can help maintain different conditions without trying to control the whole cellar to one setting.

Evaluate an existing room before building
Compare candidate spaces by how reliably they maintain the conditions your crops need, how you can manage moisture and airflow, and whether you can reach them conveniently throughout the season. Also check retrofit needs: drainage, insulation, protection from pests, and separation between crops. A basement or garage is not automatically suitable; observe its actual conditions and make sure it offers appropriate ventilation and moisture control.
If no available space works, Alaska Extension recommends choosing a convenient location and considering surface-water drainage, insulation, and construction materials. Its guidance gives a 4-by-6-foot area as an example of a small cellar that may be easier to control and adequate for many families; this is an example, not a capacity standard. For an indoor cellar, protect the rest of the house from cellar moisture. If wood will contact soil, verify that any direct-burial treatment is nontoxic for the intended application. Extension recommendations are general, not site-specific building designs. Soil, groundwater, frost depth, structural loading, electrical work, and building requirements vary by location. Check local requirements and seek qualified advice where the design or site conditions warrant it.
Plan ventilation, moisture control, and pest protection
Ventilation is part of temperature and humidity management, not an afterthought. It can help remove excess moisture and cellar heat and air out the space. Protect ventilation openings with rodent-resistant screening. Place temperature readings where they represent the stored produce; warmer air collects higher in a room, so a single high-mounted thermometer may not reflect conditions at lower shelves.

High humidity can help prevent thin-skinned root vegetables from drying out, but excess moisture and trapped condensation can contribute to spoilage. Minnesota Extension warns that unperforated plastic bags can create excess humidity, condensation, and mold or bacterial growth. Use crop-appropriate packing and airflow rather than sealing produce in airtight bags. Inspect stored crops and remove spoiled items. See Minnesota Extension’s harvesting and storage guidance.

Use an easy-to-read thermometer-hygrometer to track temperature and relative humidity where produce is stored. Compare readings with the needs of each crop and check them during the season, rather than assuming the cellar stays constant. Inspect produce regularly for drying, excess moisture, condensation, or spoilage, then adjust ventilation or separation as appropriate.

- Record temperature and humidity in the parts of the space where crops are stored.
- Keep crops with different humidity or temperature needs in separate areas.
- Check that ventilation openings remain clear and protected from rodents.
- Look for condensation and spoilage; avoid sealed, unperforated bags that trap moisture.
- Reassess conditions after weather changes or changes in how the room is being used.
