Persimmons: How to Tell When They’re Ripe and How to Eat Them

Fuyu persimmons can be eaten firm, while astringent Hachiya types usually need to become very soft. Learn how to identify ripeness, store fruit, and enjoy it.

Whether a persimmon should be crisp or very soft depends on its type. Fuyu and other non-astringent persimmons can be eaten while firm; Hachiya-style astringent persimmons usually need to ripen until very soft, or their tannins can leave your mouth feeling puckered and dry.

Why persimmons can be firm or soft when ripe

Persimmon is a broad name for fruit with different levels of astringency. In an astringent variety, tannins cause a drying, puckering sensation when the fruit is eaten before it is fully ripe. Non-astringent varieties can be pleasant to eat while still firm. That difference is why advice about persimmon texture can seem contradictory.

Type Common example When to eat Typical texture
Astringent Hachiya-style Wait until fully ripe and very soft, unless the fruit has been treated to remove astringency. Very soft, often jelly-like when ready.
Non-astringent Fuyu-style Can be eaten while firm or after softening. Firm fruit can be crisp; softer fruit is less crisp.

UF/IFAS Extension explains that astringency depends on the persimmon type and ripeness. Its postharvest guidance also notes that mature persimmons continue to ripen after harvest at room temperature.

How do you know when a persimmon is ripe?

For Hachiya-style astringent persimmons

Look for fruit that has become very soft throughout, rather than relying on color alone. If it still feels firm, let it ripen at room temperature before eating it. Eating an unripe astringent persimmon can produce a pronounced dry, puckering feeling.

For Fuyu-style non-astringent persimmons

Firmness does not mean the fruit is unripe in the same way it would for an astringent type. A Fuyu can be eaten while firm, or left to soften if you prefer a less crisp texture.

When choosing fruit, Purdue Extension advises looking for persimmons that are brightly colored and heavy for their size. Handle them gently: the skin bruises easily.

Can you eat a persimmon while it’s hard?

Yes, if it is a non-astringent type such as Fuyu. If the type is unknown, identify it before deciding: an astringent persimmon such as Hachiya is generally best eaten only after it has become very soft, unless it has undergone an appropriate astringency-removing treatment. Why does a persimmon make your mouth feel dry?

The likely cause is tannins in an unripe astringent persimmon. They create a dry, puckering sensation; this is not the same as the ordinary crispness of a firm Fuyu. Let an astringent fruit ripen until very soft before eating it, or use fruit that has been treated to remove its astringency.

How to ripen and store persimmons at home

Let firm fruit ripen

Leave mature persimmons at room temperature while they ripen. Check them gently, especially astringent fruit, which should become very soft before eating. Avoid squeezing: the skin bruises easily.

Refrigerate ripe fruit briefly

Purdue Extension recommends eating ripe persimmons promptly and says ripe fruit can be refrigerated briefly. Its guidance discusses timing in separate storage contexts, so a single exact home-storage duration is not established here.

Understand the commercial cold-storage figures

Cold-storage recommendations for commercial handling are not a household refrigerator guarantee. UF/IFAS gives a technical optimum of about 32°F (0°C) and 90%–95% relative humidity for maximum shelf life. UC Davis’s postharvest fact sheet, last updated in November 1995, reports that Fuyu and similar non-astringent cultivars can be chilling-sensitive at 41°F–59°F (5°C–15°C), with flesh browning and premature softening; it describes Hachiya as not chilling-sensitive. These controlled-storage details are useful context, not instructions to set a home refrigerator to a particular temperature or humidity.

Ways to eat or preserve persimmons

Eat non-astringent fruit fresh while firm or soft. Very ripe persimmons can also be used in desserts such as pudding, cookies, cakes, custard, and sherbet, as listed by Purdue Extension. Purdue also describes separating fully ripe native persimmon pulp from seeds and skin and freezing it for later use.

Drying is another way to preserve persimmons. UF/IFAS Extension’s consumer guide, released September 24, 2026, describes drying and hoshigaki, a Japanese hand-dried persimmon product: Persimmons (Diospyros kaki).
