Meyer lemons are usually rounder, thinner-skinned, and milder-tasting than the lemons most people buy as “regular” lemons. Regular lemons—often Eureka or Lisbon—tend to be oval, yellow, and more sharply acidic. Both are acidic citrus fruits, and appearance and flavor can vary with growing conditions and ripeness.
How to tell a Meyer lemon from a regular lemon

Are Meyer lemons sweeter than regular lemons?
Usually, Meyer lemons taste milder and sweeter than common lemons, but they are not non-acidic or sweet like oranges. UC Riverside describes the flesh as juicy and acidic, while UW–Madison Extension describes Meyer pulp as sweeter than that of other lemons. The available sources do not establish a matched numerical sugar or acidity difference between the two.
Ripeness matters: a Meyer lemon picked before it is fully ripe tastes more acidic, and it will not continue ripening after it is picked. Leaving the fruit on the tree longer favors the milder flavor. UC ANR

Which one should you use?
Choose Meyer when you want a gentler citrus flavor
Use a Meyer lemon when its distinctive, milder flavor is the point of the dish. Its juice and zest can contribute a less sharply lemony character. This is a practical inference from the flavor descriptions, not a result from a comparative recipe trial.
Choose a regular lemon for a sharper lemon taste
Use a common lemon such as Eureka or Lisbon when you want the more pointed, familiar acidity associated with lemon. Neither type is a universal substitute for the other: the best choice depends on how prominent and sharp you want the lemon flavor to be.

Can you substitute one for the other?
Often, yes, if some flavor difference is acceptable. A Meyer lemon will generally make the result milder; a regular lemon will generally make it sharper. No universal conversion ratio is established, so taste and adjust when the recipe allows rather than assuming equal amounts will taste identical.
What “regular lemon” means
“Regular lemon” is everyday shorthand, not one specific cultivar. Eureka and Lisbon are examples of true lemons; their exact appearance and growing season can differ. UF/IFAS reports that common lemon fruit generally has pale-yellow, juicy, acidic pulp and gives a general total-acidity range of 5–8%. That figure describes lemons generally and is not a head-to-head comparison with Meyer lemons. UF/IFAS

A brief note for people growing Meyer lemons
Meyer lemons can be grown in containers or indoors, but UF/IFAS says indoor fruiting is unlikely. The improved Meyer cultivar offers resistance to a virus that affected earlier introductions; UW–Madison Extension says Improved Meyer is virus-free, while original Meyer introductions carried certain viruses without showing symptoms.
