Heat, long days and growing stress can hasten the change. Once a stalk appears, pick any leaves that still taste good; remove the plant when its leaves are no longer worth harvesting, or leave it to flower if you want to try for seed.
How to tell if lettuce is bolting
Look for an elongated central stem rising above the leaves and developing into a flowering stalk. Bolting is the plant’s transition from leafy, vegetative growth to reproductive growth, and it signals that the usual leaf harvest is ending. Utah State University Extension defines bolting as this shift to flower formation; University of Minnesota Extension describes lettuce sending up a flowering stalk and stopping its usual growth.
Bitterness by itself does not confirm bolting. Heat and water stress can make lettuce bitter, too. The stalk is the clearer sign. Minnesota Extension’s lettuce diagnosis guidance associates multiple days above 75°F with flowering, but that is a regional diagnostic guideline, not a universal temperature cutoff for every cultivar.
Why lettuce bolts
Lettuce grows best in cool weather. Minnesota Extension gives an ideal range of a nighttime low around 50°F and a daytime high up to 68°F in its home-garden guidance, reviewed in 2024. These are recommendations for favorable growing conditions, not a guarantee that plants will remain leafy below a specific temperature. The same guidance identifies heat, long days and high light intensity as factors associated with bolting.

Stress can also contribute. Utah State Extension notes that conditions that slow leafy growth—including heat, long days, chilled transplants and water stress—can make bolting more likely. Oregon State University Extension likewise warns that letting lettuce dry out too much can contribute to the problem. In practice, weather and plant stress can combine; there is no single temperature at which all lettuce varieties bolt.
What to do with a bolted plant
- Check for a flowering stalk. If the central stem is elongating, the plant is moving into its reproductive stage.
- Taste a leaf if you are deciding whether to harvest it. Bolted lettuce often becomes bitter, but whether the taste is acceptable is a matter of preference. Extension guidance describes this as a quality and harvest issue, not a food-safety determination.
- Harvest what is still worthwhile, then choose whether to remove the plant. Pick any leaves you like; remove the plant when it no longer produces leaves you want to eat. If you want to try for seed, you can leave the plant to flower.
Minnesota Extension says bolting can bring extreme bitterness and end the usual harvest opportunity. Shade or watering may improve conditions for plants that are still growing, but they will not restart leafy growth after flowering has begun.

How to delay bolting in your next planting
Plant for cool weather
Grow a spring crop early enough to harvest before heat and long days take hold, or sow a fall crop as temperatures cool. Minnesota Extension’s fall-sowing recommendation is about three months before the average first frost; use your local frost date and climate to adapt that timing.
Stagger sowings and harvest promptly
Make successive sowings rather than planting all your lettuce at once, so harvests are spread over time. Utah State Extension recommends sequential planting to support consistent production in leafy greens. For spring lettuce, harvest as soon as it is ready instead of waiting through increasing heat and day length.

Keep moisture steady and provide summer shade
Water consistently so the soil does not dry out excessively. In hot weather, shade—such as shade from taller plants—can improve growing conditions. Oregon State and Minnesota Extension recommend shade for summer lettuce. It can help a crop that is still growing, but cannot reverse bolting in a plant that has already started flowering.
Choose a cultivar suited to your season
When comparing seed, look for descriptions such as “slow-bolting” or “heat-tolerant,” then check days to maturity, lettuce type, intended harvest stage and suitability for your local growing season. Utah State Extension notes that temperatures above 80°F cause many established leafy greens to bolt; that is general leafy-green guidance, not a guaranteed lettuce threshold. Cultivar choice can lower the risk, but no variety is immune to unsuitable conditions.

What to compare when choosing seed or planting dates
- Seed: stated heat tolerance or slow-bolting traits, days to maturity, lettuce type and whether the variety suits your climate and planned season.
- Planting plan: a spring crop harvested before heat, successive sowings to spread harvests, or a fall crop timed to local frost dates.
Extension guidance supports these comparisons but does not establish one best variety for every climate. Recommendations and timing should be matched to your region.
