Yes. You can put hot food directly in a home refrigerator; the FDA says it does not harm the appliance. Refrigerate perishable food within two hours of cooking or coming off hot holding—or within one hour if the surrounding temperature is above 90°F (32°C). For a large quantity, divide it into shallow containers so it cools faster rather than leaving a deep pot on the counter.
Why you should not wait for food to reach room temperature
Perishable food should not sit out while you wait for it to feel cool. USDA guidance sets a limit of two hours at ordinary room temperatures, shortened to one hour when the surrounding temperature is above 90°F (32°C). These are total time limits outside temperature control, not extra time to wait after food has cooled. See USDA FSIS’s leftovers guidance.
USDA describes 40–140°F (4–60°C) as the “Danger Zone,” where bacteria grow most rapidly. FSIS says some bacteria can double in as little as 20 minutes in this range; that is a general warning, not a prediction for every food or condition. USDA FSIS explains the Danger Zone.
How to refrigerate hot food safely
- Divide large amounts. Move food from a large or deep pot into several smaller, shallow containers. A deep mass cools more slowly than shallow portions.
- Refrigerate promptly. Put the containers in the refrigerator without waiting for the food to cool fully on the counter.
- Use a cold-water or ice bath if useful. USDA also describes chilling food rapidly in an ice or cold-water bath before refrigerating it. This can help with a large amount, but it does not extend the time limit for food left out.
- Keep the refrigerator at 40°F (4°C) or below. Check the temperature with an appliance thermometer if the refrigerator does not display it reliably. See USDA FSIS refrigeration guidance and the FDA’s refrigerator thermometer advice.
What if the food has been left out too long?
Discard perishable food that has been outside temperature control for more than two hours, or more than one hour when the surrounding temperature is above 90°F (32°C). Do not rely on reheating to make food safe after it has exceeded those limits. For properly stored cooked leftovers, FoodSafety.gov recommends using them within four days and reheating them to 165°F (74°C); these steps do not make food safe if it was left out too long.
