Peach paper is unbleached, food-use butcher paper used to wrap meat during smoking. For brisket, smoke it uncovered until the bark is set and the cook reaches the stall, then wrap it snugly and return it to the smoker until probe-tender. Compared with foil, paper is meant to let some moisture escape, helping preserve bark texture; that is a manufacturer-described tradeoff, not a proven guarantee or a measured head-to-head result.
What peach paper does in a BBQ cook
Peach paper—also sold as pink butcher paper—is a breathable wrap for smoking large cuts. Reynolds says its butcher paper can help retain moisture while maintaining a crisp bark. Butcher BBQ likewise contrasts paper that allows some moisture through with foil that seals the meat in. The practical aim is to moderate drying during the long cook without creating the same steamy environment as a sealed foil wrap.
That is a middle option between leaving meat uncovered and wrapping it in foil. Foil is presented by Reynolds as a faster, wetter approach that can soften bark; paper is intended to better preserve bark texture. The sources provide no independent side-by-side measurements, so neither method is a universal winner.
When to wrap a brisket
Wait until the bark is set, rather than wrapping just because the thermometer reaches a particular number. Reynolds gives approximately 160–170°F as a brisket wrapping window; Butcher BBQ gives approximately 160–165°F. Both also emphasize the bark. It should look dark and feel firm, and seasoning should not rub off easily. If it is still soft or smears when touched, continue cooking uncovered and check again.

The stall is a common point to consider wrapping: the internal temperature may plateau as moisture evaporates from the meat’s surface. Temperature is a guide, not a substitute for checking the bark.
How to wrap brisket in peach paper
- Smoke uncovered. Trim and season the brisket, then cook it until the bark is set and it is around the wrapping window described above.
- Prepare enough paper for a double layer. Use food-grade butcher paper sold for smoking. For a large brisket, tear off enough to wrap it twice.
- Wrap snugly. Set the brisket on the paper, fold the sides over it with a generous overlap, and tuck the ends underneath. A close wrap helps keep the paper in place.
- Return it to the smoker. Continue cooking until the brisket is tender. Manufacturer examples place the finish around 200–205°F, but use a thermometer and check that a probe slides into the flat with little resistance; do not rely on a fixed cooking time.
- Rest before slicing. Reynolds recommends resting the wrapped meat on a tray. Its guidance does not establish one rest duration for every cut, so allow for the size of the brisket and your serving plan.
Choosing paper and avoiding unsafe substitutes
Choose paper explicitly sold for food use and smoking, and check the package for its construction and heat rating. Reynolds describes its 18-inch roll as FDA compliant, unwaxed, unbleached, and recommended for use up to 300°F. Butcher BBQ lists uncoated, unbleached paper in 18- or 24-inch widths. These are brand-specific descriptions, not ratings that apply to every roll.

- Confirm that the paper is intended for food contact and that its width allows a snug wrap or double layer for your cut.
- Follow the roll’s stated temperature limit. Reynolds says its paper should not be used above 300°F.
- Keep paper away from open flame. Reynolds cautions that no paper product should be in direct contact with open flames.
- Do not substitute parchment, freezer paper, wax paper, or unidentified craft or shipping paper for smoking paper; Reynolds says those alternatives are not suitable for smoking or grilling.
Use thermometers for safety, not color
USDA FSIS guidance says to monitor smoker or grill air temperature with a thermometer and check meat with a food thermometer. Its smoking guidance recommends maintaining smoker air between 225 and 300°F. The paper’s package rating still matters: a smoker operating within that air-temperature range does not override the product’s stated limit.
USDA FSIS lists minimum internal temperatures of 145°F for whole cuts of beef, pork, lamb, and veal, followed by a three-minute rest; 160°F for ground beef, pork, lamb, and veal; and 165°F for poultry. These are food-safety minimums, not brisket tenderness targets. USDA FSIS also notes that smoked meat and poultry may remain pink when well done, so color cannot establish safe doneness. Its guidance says a pink rim may extend up to one-half inch in some cooked smoked meat; that describes appearance, not a safety threshold. Refrigerate smoked meat and poultry within two hours of taking it out of the smoker.

Adjust the method for other cuts
Reynolds’ guide also discusses pork shoulder, ribs, and turkey, but does not prescribe one identical wrapping cue for every cut. Use the cut-specific guidance rather than applying brisket’s wrapping temperature and finish cues across the board.
