Store carrots and beets cold and humid, but do not treat every root crop alike: potatoes need curing and darkness, while mature onions and winter squash generally need cooler, drier storage than carrots. Start by preparing each crop properly, then choose a storage place that can maintain the right conditions.
Prepare vegetables before storing them
- Move harvested produce out of direct sun and into suitable storage promptly.
- Remove greens from root crops. For carrots, cut the tops about an inch above the root, as University of Illinois Extension recommends.
- Brush off soil where appropriate. If you wash roots, let them air-dry before storage; excess surface moisture encourages disease, notes Oregon State University Extension.
- Use bags or containers that balance airflow and moisture retention. Perforated bags can help retain humidity without sealing produce in wet, stagnant air.
Store carrots and similar roots cold and humid
Carrots keep best in cold, humid conditions. Illinois Extension recommends 32°F with high humidity and says carrots can last four to six months under proper storage conditions. It suggests a refrigerator, lightly moist sand in an underground cellar, or an insulated garden pit. That duration is specific to carrots kept under suitable conditions, not a guarantee for every home setup.
For cold, moist vegetable storage more broadly, OSU Extension gives 32–40°F and 90–95% relative humidity, and suggests using bags or a sufficiently full refrigerator crisper to retain humidity. Its separate winter-vegetable guide recommends 32°F and 95–98% relative humidity for root crops. These are crop-storage targets; an ordinary refrigerator may not precisely control humidity at those levels.
Keep beets cold, humid, and dry on the surface
Remove beet greens and store the roots cold and humid. Illinois Extension recommends 32°F and 95% humidity. Utah State University Extension gives 32–35°F and 98–100% relative humidity for washed, bagged beets. These are separate extension recommendations, not a single precision setting that a household refrigerator must achieve. If you wash beets, air-dry them before bagging so surface water does not remain trapped.

Cure potatoes before long-term storage
Potatoes need a different routine from carrots and beets. Wait until skins are mature; OSU Extension advises, “If the skin rubs off easily, wait another week before harvesting.” Cure newly harvested potatoes for 7–10 days in a dark, well-ventilated place with moderate temperatures and high humidity. Then lower the storage temperature gradually to 40–46°F for table use.
Keep cured potatoes dark in perforated bags or ventilated containers. Light can turn tubers green, and OSU advises avoiding temperatures below 38°F because potatoes can accumulate sugar and taste sweet. Sort through them periodically: use injured or diseased tubers early or remove them, since they do not store well and may spread decay.

Store mature onions and winter squash separately
Do not put mature onions and winter squash into the same cold, humid conditions used for carrots and beets. OSU refrigeration guidance says refrigeration can cause undesirable quality changes in raw potatoes, mature onions, and winter squash, and gives about 60°F as a target in that guidance. Its winter-vegetable guide recommends storing cured onions cool and dry. Conditions vary by crop and maturity, so keep these items in a drier, warmer place than cold-stored roots rather than sealing everything together in a damp container.

A refrigerator crisper is practical for small quantities of carrots and beets if it stays cold and humidity is retained. A cellar or insulated pit can hold larger amounts, but it needs suitable temperature and moisture control. Potatoes need a separate dark, ventilated location; onions and winter squash need drier conditions.

Keep roots away from apples and pears when possible. OSU Extension notes that ethylene from these fruits can make many root crops bitter. Check stored produce periodically and remove anything decaying. The key is matching the storage environment to the crop: retain humidity for roots that need it, allow airflow, and avoid leaving washed produce wet.
