For nuts you will not eat within a few weeks, use a clean, dry, airtight container and refrigerate or freeze them. Keep them away from heat, light, moisture and strong odors. Refrigeration at 40°F (4°C) or below generally preserves common nuts for about a year or longer; freezing at 0°F (−18°C) or below can preserve quality for two years or more, depending on the nut, its condition and its packaging.

Choose storage based on when you will use the nuts

Storage method Best use What to do
Room temperature Small quantities used quickly Keep in a cool, dark, dry cupboard in a tightly closed container. Quality declines faster, and insects are more likely than in cold storage.
Refrigerator (40°F/4°C or below) Nuts needed over the next several months Seal in moisture-free, odor-tight packaging and keep away from strongly scented foods.
Freezer (0°F/−18°C or below) Large quantities or nuts held for the longest period Use freezer-safe airtight packaging, remove as much excess air as practical, and divide into portions so the main supply is not repeatedly exposed.

UC Davis Postharvest Research and Extension Center advises sealing nuts that will not be used within a few weeks and refrigerating or freezing them. Cold temperatures slow the reactions that damage flavor, while a tight package limits moisture and odor transfer.

How to package nuts correctly

Use a clean, dry, odor-tight container

Transfer opened or bulk nuts to a clean, completely dry glass or plastic container with a secure lid, or to a heavy-duty resealable freezer bag. K-State Extension quotes its faculty expert as saying, “A solid plastic container with a tightly fitting lid is preferred.” Do not pack nuts into a container that still contains water, crumbs or food odors.

Limit air, light and repeated exposure

Keep the container closed except when taking out a portion. For a large supply, separate a small amount for regular use and leave the remainder sealed in cold storage. This reduces warm-ups and exposure to oxygen, light and humid refrigerator air.

Keep nuts away from strong smells

Shelled nuts readily pick up surrounding odors. Store them away from fish, cabbage, onions and other strongly scented foods; an odor-tight package is especially important in a crowded refrigerator or freezer.

How long different nuts generally keep cold

These are quality estimates from University of California Agriculture and Natural Resources (UC ANR), not safety deadlines. Actual life depends on species, whether the nuts are shelled or chopped, their condition when packed, temperature stability, humidity and the package.

K-State Extension gives more conservative general guidance: tightly sealed nutmeats may be frozen for up to one year, with use within six months preferred. Treat that as a household preference rather than combining it with UC ANR’s nut-specific estimates into one universal shelf-life rule.

Why nuts become stale or rancid

Nuts contain oils. The Almond Board of California explains that lipid oxidation breaks down fats and creates compounds associated with rancid odors and flavors. Higher temperatures, increased moisture and light can accelerate that process. For almonds, its technical guidance recommends conditions below 50°F (10°C) and below 65% relative humidity; those are industry recommendations for almonds, not a household requirement for every nut.

Room-temperature storage therefore gives the shortest quality life for ordinary nuts. Refrigeration or freezing is the better choice when you cannot use them soon.

Chestnuts need different handling

Chestnuts contain more moisture than the drier nuts covered by the general guidance and can mold in roughly two weeks at room temperature. UC ANR lists unshelled chestnuts at about two to three months refrigerated and shelled chestnuts at about one year refrigerated; either form may keep for a year or more frozen when properly packaged. Do not apply the almond, pecan, pistachio or walnut timetable to chestnuts.

How to check nuts before eating

Signs of rancidity

  • A stale, sharp or unpleasant smell.
  • A harsh, bitter or otherwise sharply unpleasant taste.
  • For walnuts specifically, the California Walnut Board identifies a paint-thinner odor as a rancidity warning; fresh walnuts should smell mildly nutty and taste sweet.

UC ANR describes rancid nuts as a quality problem that tastes unpleasant rather than automatically unsafe. That statement does not make moldy, insect-damaged, contaminated or unusually damp nuts safe. Discard nuts showing those separate spoilage or contamination concerns.

What to do with home-harvested nuts

If you intend to store home-harvested nuts at room temperature, UC ANR recommends freezing them at 0°F (−18°C) or below for 48 hours to kill insect pests and eggs. This treatment is not sterilization and does not destroy harmful bacteria such as Salmonella. Start with sound, properly dried nuts and discard any that are moldy or contaminated.

Penn State Extension recommends freezer storage for walnuts with minimal exposure to light and oxygen, while allowing short refrigerator storage for kernels. That advice is specific to walnuts and should not be treated as a precise duration for every nut.

A simple storage routine

  1. Read the package directions. For commercially sealed walnuts, the California Walnut Board says an unopened package may remain in the refrigerator or freezer.
  2. Inspect the nuts. Remove damp, moldy, insect-damaged or visibly contaminated pieces.
  3. Choose the temperature. Refrigerate nuts you expect to use within the next several months; freeze larger quantities or anything you will keep longer.
  4. Seal them. Use a clean, dry, airtight, odor-tight container or suitable freezer bag. After opening a commercial package, transfer walnuts to an airtight container before returning them to cold storage.
  5. Label and portion. Mark the date and divide a large supply into usable portions so the main package stays closed.
  6. Thaw only what you need. Let a sealed portion come to room temperature before opening it; this helps prevent condensation from wetting the nuts.
  7. Recheck quality. Smell and inspect the portion before use, and discard anything with mold, contamination or an unacceptable odor or taste.

Common mistakes to avoid

  • Leaving a large opened bag in a warm pantry for months.
  • Using a loose paper bag or an unsealed container in the refrigerator.
  • Storing nuts beside foods with strong odors.
  • Putting warm nuts into a sealed package, which can create condensation.
  • Assuming one shelf-life number applies equally to whole, chopped, shelled and unshelled nuts.
  • Calling a 48-hour freeze of home-harvested nuts a treatment that makes contaminated food safe.
