How to Store Fresh Rosemary: Fridge, Freezer, and Drying Methods

Keep rosemary fresh for near-term use with a damp paper towel in the fridge, or freeze or dry sprigs for later. Published storage times are estimates.

For rosemary you plan to use soon, keep the sprigs unwashed, wrap them loosely in a slightly damp paper towel, place them in a bag, and refrigerate. Freeze rosemary for longer storage or dry it for a pantry-ready herb. Refrigerator life is an estimate, not a guarantee: published guidance ranges from five days for fresh herbs generally to 10–14 days for rosemary stored under specific conditions.

Refrigerate rosemary you will use soon

Keep the sprigs unwashed until you are ready to cook. Loosely wrap them in a paper towel that is slightly damp, not soaking, put them in a bag, and place them in the refrigerator. Purdue Extension also says rosemary may be left in its original package until use. Health Canada recommends storing fresh herbs unwashed in a damp paper towel inside a resealable bag in the crisper; its guidance is for fresh herbs generally, rather than rosemary alone. For a different setup, stand the stems in a glass of water, cover loosely with a plastic bag, and refrigerate, as described by University of Illinois Extension.

How long it may last

Published estimates differ: Health Canada advises up to five days for fresh herbs generally; Illinois Extension estimates up to one week for rosemary; and North Dakota State University Extension gives 10 to 14 days when sprigs are loosely wrapped in a slightly damp paper towel and then a plastic storage bag. These are source-specific estimates, not a guaranteed shelf life. Check the sprigs before use and discard any that are no longer in good condition. North Dakota State University Extension

Wash just before using

Rinse rosemary under cool running water and pat it dry before use. Keep fresh herbs, hands, utensils, counters, and cutting boards from being contaminated by raw meat, poultry, seafood, or their juices. Health Canada

Freeze rosemary for longer storage

Choose whole sprigs if you want to take out a small amount at a time, or freeze chopped rosemary in portions for cooking. Purdue Extension recommends freezing rosemary in an ice cube tray with oil or water. Health Canada’s general herb method is to wash, chop or purée the herbs, press them into a tray, cover with water, and freeze; it says herb cubes can be stored for up to three months.   1. For whole sprigs, freeze them in a freezer bag or container. North Dakota State University Extension also suggests freezing sprigs on a baking sheet until solid, then transferring them to a freezer bag.
  2. For ready-to-use portions, chop the rosemary, divide it among the sections of an ice cube tray, add water or oil, and freeze. The tray is optional; a freezer bag or container works for whole sprigs.
  3. Use frozen portions in dishes where frozen herbs are suitable. Rosemary frozen with water or oil is most convenient when the liquid can go into the recipe, too.

Dry rosemary for a pantry-ready herb

Air-drying suits woody herbs such as rosemary. Rinse the sprigs under cold running water, pat them dry, tie them together at the base, and hang them in a well-ventilated area. North Dakota State University Extension suggests placing a paper bag around the bunch to protect it from dust and irritants; Illinois Extension also describes hanging tied sprigs in a ventilated area. A dehydrator is another option, but it is not necessary for the air-drying method.

Once dry, store rosemary in a sealed container in a cool, dark, dry place. Purdue Extension gives an approximate keeping period of six months for dried rosemary; treat that as guidance rather than a guarantee of quality. Purdue Extension

Choose the method that fits your next recipe
