To save heirloom tomato seeds, ferment the seed-filled pulp to remove its gel coating, rinse and dry the seeds completely, then store them in a labeled, cool, dark, dry place. Start with a ripe tomato from a healthy, disease-free open-pollinated or heirloom plant; seed from a hybrid may not grow true to the parent.
Before you begin: choose the right tomato and label it
Use a ripe or slightly overripe fruit from a healthy, disease-free plant. Heirloom and other open-pollinated tomatoes generally produce seed that grows true to type. Seeds saved from an F1 hybrid can produce plants with unpredictable traits, so they are not a dependable choice if you want next year’s plants to resemble the parent.

If you are saving more than one variety, label the jar, drying surface, and final packet before cutting the fruit. Record the variety and harvest date; adding growing notes can help you remember how the plant performed.
How to save heirloom tomato seeds

Cut the tomato and extract the seeds
Cut the fruit across its center and squeeze the pulp, juice, and seeds into a clean jar. Add a small amount of water only if the fruit is unusually dry.

Ferment the seed-filled pulp
Cover the jar loosely with a paper towel, cheesecloth, or cloth. Leave it in a warm place out of direct sunlight. Fermentation breaks down the gel coating around tomato seeds, which can inhibit sprouting.
Published guidance varies: UC Master Gardener Program of Sonoma County gives a range of 24–96 hours in its 2025 guidance and 24 hours to four days in a 2016 handout; Brooklyn Botanic Garden describes about a week. Use the process rather than a fixed clock as your guide: bubbles, mold, or scum on the surface can occur during fermentation.

Separate the heavier seeds
Add water to the jar and let the contents settle. Heavy seeds sink; skim or pour off the floating mold, pulp, and hollow seeds. Keep the settled seeds.

Rinse away the remaining gel
Pour the seeds into a colander or fine strainer and rinse with cool water until the gel and plant fragments are gone. Separate any clumps so the seeds can dry individually.

Dry the seeds completely
Spread the seeds in a single layer on a coffee filter, paper plate, or similar surface. Keep them out of direct sun and away from an oven or other heat source. Drying commonly takes one to four weeks and can take longer in humid conditions. Turn or separate clumps if needed so moisture is not trapped.
Seeds are ready to package when they feel hard and do not indent when gently tested. Do not store seeds that still feel soft or damp: residual moisture can encourage mold and reduce viability.

Package and store the dry seeds
Place only fully dry seeds in a labeled paper envelope or a clean, dry jar. Note the variety and date. Keep the packet or jar in a cool, dark, dry place with low humidity. A sealed outer jar or metal container can add protection from insects and rodents, but the seeds themselves must be dry before sealing.

How long can saved tomato seeds last?
Published estimates are not a guarantee for every seed lot. UC Master Gardener Program of Sonoma County says properly stored tomato seed can remain viable for at least five years. Brooklyn Botanic Garden gives a range of three to ten years, sometimes longer. Actual longevity depends on how dry the seeds were when stored and the temperature and humidity where they are kept.

Common mistakes to avoid
- Saving from a hybrid when you want the same tomato next year: hybrid offspring may not retain the parent’s traits.
- Skipping the label: mark each variety and date before processing so lots cannot be confused.
- Packaging damp seed: wait until seeds are hard and fully dry to reduce the risk of mold and lost viability.
- Drying in direct sun or heat: use a shaded, airy spot instead.
- Assuming every floating seed is viable: the separation step keeps the heavier settled seeds and pours off floating material.
