It is a simple way to use a kitchen scrap, but it will not grow into a whole new head. Keep the base clean, then either leave it in water or move it to potting soil after roots appear.
How do you regrow lettuce from scraps?
- Save the base. Cut away the edible leaves from a romaine heart, leaving the root end and central growing point intact. Iowa State University Extension recommends keeping about the bottom two inches of the heart. Iowa State Extension’s kitchen-scrap growing guide explains this approach.
- Set it in shallow water. Stand the base upright in a clean, shallow dish or jar with water covering only the bottom portion. Extension guidance varies slightly on depth, so aim for a shallow layer rather than submerging the base.
- Give it light and warmth. Place the dish in a warm, sunny location. Replace the water every two to three days and keep the container clean to help limit mold or fungal growth.
- Watch the center for growth. New leaves may emerge from the middle after several days to several weeks. Timing varies, so there is no dependable date to expect usable leaves.
- Choose whether to continue in water or soil. Once roots appear, you can keep the base in fresh, shallow water or transfer it to a container with potting soil. If using soil, cover the roots and base while leaving the leaves exposed.
- Harvest modestly. If the new leaves become large enough to use, take a few outer leaves for a salad or sandwich.
Can you regrow romaine lettuce from the base?
Yes. Romaine is the type addressed by the extension guidance: preserve its basal end and central rosette, then place the base in shallow water. The regrowth is limited. University of Nevada, Reno Extension says not to expect a whole new head; the likely result is smaller leaves rather than a full replacement for the original lettuce.
Should you keep the scrap in water or plant it in soil?

The cited extension guidance describes both routes but does not establish that either produces a larger or better harvest. Choose based on whether you want the simplest short-term setup or want to continue growing the rooted base in a container.
Is regrowing lettuce from scraps a dependable way to grow a crop?
No. Treat it as a low-cost experiment that may provide a few extra leaves, not as a reliable way to produce a full head. For a planned lettuce crop, sowing seed is the conventional option. The University of Maryland Extension’s home-garden lettuce guide covers general cultivation and harvesting; it is not a direct comparison trial of seed-grown lettuce and scrap regrowth.
