Keep seed flats evenly moist until seedlings emerge, then water established plants sparingly. In temperate gardens, frost or the plant’s short-day flowering response may prevent seeds from ripening, so a healthy plant does not guarantee a harvest.
Make sure you have the right chia
This guide is about Salvia hispanica, the mint-family plant grown for edible, mottled seeds. “Chia” can also refer to Salvia columbariae, known as golden chia, desert chia, or California sage. Check the botanical name on a seed packet to avoid buying a different plant. The UC Master Gardeners of Santa Clara County profile covers the distinction.
Choose seed labeled for planting. The available growing guidance supports starting chia from seed, but does not establish that ordinary culinary chia is viable for sowing or verify any particular seller or product.
Choose when and how to sow
Base sowing time on your local frost dates and warm-season length, not on a universal calendar. The Santa Clara County guide recommends sowing outdoors after the last spring frost, or starting indoors 8–10 weeks before that date and transplanting after frost danger passes. That timing is a regional example. The USDA NRCS guide also describes autumn direct sowing for a California wildflower setting, underscoring that calendars vary by region.

- EDIBLE SEED HARVEST - Grow Mexican chia for abundant seed production; ideal for smoothies, baking, soaking, and long term pantry storage from your own garden
- ORNAMENTAL POLLINATOR FLOWERS - Mexican chia (Salvia hispanica) produces tall spikes of soft purple blooms, attracting bees and beneficial insects while adding height and movement to summer beds
- WARM SEASON GROWTH - Fast growing annual thrives in full sun, well drained soil, and hot conditions once established, performing reliably in garden rows or large containers
- INDOOR OR OUTDOOR VERSATILITY - Plant in raised beds, pots, or garden plots for seed harvest, or grow thickly for fresh microgreens with strong light and steady moisture
- FAMILY OWNED USA SMALL BUSINESS – Heirloom non-GMO seeds from Survival Garden Seeds, a trusted American brand; always open-pollinated, untreated, and quality tested for garden success
| Method | When it fits | What to do |
|---|---|---|
| Direct sow | You can wait until frost danger has passed and the growing season is long enough for plants to develop. | Sow in an open, sunny, well-drained bed. Keep weeds down while seedlings establish. |
| Start indoors | You want to get seedlings started before outdoor sowing conditions arrive. | Sow indoors 8–10 weeks before the local last spring frost as a Santa Clara County example; transplant only after frost danger passes. |
For indoor starts, the USDA NRCS plant guide recommends light, porous soil, sowing seed evenly on the surface, covering it with no more than twice the seed’s diameter, and watering gently with a fine spray. Keep the flat evenly moist before emergence; once seedlings appear, reduce watering. The reviewed guidance does not establish a general germination-time estimate.
Give established plants sun, drainage, and restrained water
Use a sunny location and soil that drains well. UC Master Gardeners list full sun to partial shade and low water; USDA recommends full sun and good drainage. Water enough to establish plants, then less frequently. The key difference is stage: steady moisture matters while seed is germinating, whereas established chia is relatively drought tolerant. USDA NRCS puts it plainly: “Once established, Chia is quite drought tolerant.”

- Annual. 10-20 days. Zone 9-11. 18-24" height. Produces pointed, textured green leaves with serrated edges, and purple flower spikes.
- Famous for its use in Chia Pets, this herb seed also gives many health benefits. The plant, which derives from the mint family, has fuzzy, dark green leaves and can grow up to 60 centimeters tall if grown in the correct conditions.

- USDA Zones: 8, 9, 10, 11, 12
There is no supported one-size-fits-all watering interval; soil and climate change how quickly a bed dries. Avoid planting chia beside crops that need frequent irrigation. The Santa Clara County profile gives a local mature-size reference of 2–3 feet tall and 1–2 feet wide, but size can vary with growing conditions.
Check whether your climate can deliver seed
Chia is frost sensitive and is commonly grown as an annual where frost occurs; UC notes it may persist in frost-free microclimates. A plant can grow well and still fail to produce mature seed if the season ends too soon. The University of Kentucky’s 2016 crop profile says traditional chia requires short days to flower and may be killed by frost before seeds mature in temperate climates. It also discusses long-day-flowering breeding lines, but the profile is archived and should not be treated as a current cultivar list.

Before planting for harvest, consider both the frost-free season and whether flowering and seed maturation can occur in your local conditions. If your main goal is foliage or an ornamental plant, lack of a seed crop may matter less; if you need edible seed, climate suitability is central.
Harvest and save seed
- Watch for browning pods. UC Master Gardeners recommend collecting seed pods in late fall when they just begin to turn brown.
- Dry them with airflow. Spread or hang pods in a well-ventilated space until dry.
- Release and clean the seed. Crush the dry pods, then separate the small seeds from the chaff.
Seed left behind may self-sow the following season if it escapes predation and conditions allow. If you want to manage where chia returns, collect pods before seeds scatter.

Keep field-crop figures in context
Some published recommendations concern commercial or experimental production, not household beds. The Indian Council of Agricultural Research (ICAR) reports practices based on experiments conducted from 2021 to 2024 in India, including an August 1–September 15 sowing window and seed rates of 2.0 kg/ha for line sowing or 2.5–3.0 kg/ha for broadcasting. These are regional production figures, not universal garden instructions.
ICAR also reports a chia–fenugreek intercrop result of 628 kg/ha chia seed and 4,685 kg/ha green fenugreek, with 1,106 kg/ha chia-equivalent yield. Its account of supplemental rabi irrigation—about 350 mm at 60% ETo—and a 0.5% KNO₃ foliar spray at 30 and 45 days after sowing associated with a 40% water saving likewise describes that experimental production system. These numbers should not be translated into backyard spacing, fertilizer, watering, or yield expectations. See ICAR’s chia practices page.
