Most baking sheets can be made much cleaner, but “brand new” is not guaranteed. The correct method depends on the surface: bare aluminum, stainless steel, nonstick, ceramic-coated, or another finish. Start gently, identify the material, and escalate only when the manufacturer’s care instructions allow it.

Yes—most baking sheets can be made dramatically cleaner and smoother, but “brand new” is not guaranteed. Darkening may be a normal patina created by repeatedly heated oil, while raised grease, burnt food, and sticky residue should be removed. The safest cleaning method depends on whether your sheet is bare aluminum, stainless steel, nonstick, ceramic-coated, or another finish.

Before using baking soda, vinegar, a dishwasher, or an abrasive cleaner, check the pan’s exact care instructions. A method that is appropriate for stainless steel can permanently scratch aluminum or destroy a nonstick coating.

First: identify the baking sheet’s surface

Surface Safest starting point Use extra caution with
Bare aluminum Hot water, liquid dish soap, soft sponge; baking-soda paste for stubborn residue if permitted by the manufacturer Vinegar, acidic foods, harsh abrasives, dishwasher cleaning
Stainless steel Hot soapy water; stainless-steel cleaner for discoloration Chlorine bleach, abrasive tools used too aggressively
Nonstick Warm soapy water and a soft, non-metal tool Steel wool, metal scrapers, abrasive powders, oven cleaner, extended soaking
Ceramic-coated or enameled Follow the product’s care guide; usually warm soapy water and a soft sponge Metal tools, scouring pads, unapproved powders and chemicals

The universal first-pass cleaning method

Use this sequence for nearly any baking sheet unless the manufacturer’s instructions say otherwise.

  1. Let the sheet cool completely. Do not put a hot pan into cold water. Thermal shock can warp bakeware and may damage a coating.
  2. Remove loose crumbs and food. Use a plastic pan scraper, nylon brush, or soft spatula. Never pry at baked-on food with a knife or metal scraper, especially on coated bakeware.
  3. Soak briefly in hot water and dish soap. Add enough hot water to cover the residue and a small amount of liquid dish soap. Let the pan sit long enough to soften the food, rather than leaving it submerged for hours when the care guide warns against extended soaking.
  4. Wash gently. Use a non-scratch sponge or nylon brush. Work over the residue with light pressure.
  5. Rinse and dry completely. Remaining soap can leave a film, and standing water can contribute to spotting or corrosion on some metals.

If this removes the food but leaves a flat brown or gray stain, the stain may be baked-in patina rather than removable dirt. Continue only with the method appropriate for the material.

How to deep-clean a bare aluminum or uncoated baking sheet

For bare aluminum or another uncoated metal that has polymerized grease or firmly attached food, a baking-soda paste is a reasonable next step if the manufacturer allows mild abrasion.

For moderate buildup: baking-soda paste

  1. Wash away loose food using the universal first-pass method.
  2. Sprinkle baking soda for cleaning over the affected area.
  3. Add just enough water to make a thick paste.
  4. Spread the paste over the residue and leave it for several hours, checking the pan’s care instructions first.
  5. Lift the softened paste and residue with a plastic scraper. Avoid forceful scraping.
  6. Wash with warm soapy water, rinse thoroughly, and dry.

Baking soda works because it is mildly abrasive and alkaline. Those same properties mean it is not automatically safe for every finish. Do not use it on nonstick or ceramic-coated bakeware unless the manufacturer specifically permits it.

For severe buildup: baking soda and hydrogen peroxide

A tested household cleaning approach used baking soda wet with hydrogen peroxide and was reported as the most effective of the methods tested. It still did not remove every mark, so treat it as a restoration attempt—not a guarantee of a factory-new appearance.

  1. Confirm that the sheet is bare, uncoated metal or that its manufacturer specifically approves this treatment. Do not use this process on nonstick or ceramic-coated surfaces by default.
  2. Cover the affected area with baking soda.
  3. Spray it until wet with 3% hydrogen peroxide. The goal is a damp, spreadable paste—not a pool of liquid.
  4. Leave the paste in place for several hours or overnight.
  5. When the paste has dried, loosen it with a plastic scraper. Use light pressure and stop if the surface begins to scratch.
  6. Wash the sheet with warm water and dish soap, rinse very well, and dry it immediately.

Use one cleaning method at a time. Do not add vinegar, bleach, ammonia, oven cleaner, or another product to this treatment.

How to clean stainless-steel baking sheets

Start with hot water, liquid dish soap, and a soft sponge or brush. Stainless steel generally tolerates dishwasher cleaning better than non-anodized aluminum or many coated sheets, but hand washing can reduce cosmetic wear and the risk of warping.

For gray, brown, or rainbow-like discoloration that remains after washing, use a stainless-steel cleaner or a product such as Bar Keepers Friend only as directed on its label. Apply it with a non-abrasive sponge or soft brush, work in the direction of the metal’s grain where visible, then rinse thoroughly and dry.

Do not transfer stainless-steel polishing advice to bare aluminum, nonstick, ceramic-coated, or enameled sheets. “Popular” does not mean material-compatible.

How to clean nonstick and ceramic-coated baking sheets

With coated bakeware, the coating is the finish you are trying to preserve. Do not scour it in pursuit of a perfectly uniform color.

  1. Allow the sheet to cool completely.
  2. Remove loose food with a plastic scraper or non-metal utensil.
  3. Wash with warm water and liquid dish soap using a soft sponge, cloth, textured non-metal scrubber, or manufacturer-approved brush.
  4. For darker baked-on food, use a cleaning spray only if the manufacturer recommends it. For example, Nordic Ware’s guidance for its Brilliant nonstick sheet specifies Dawn Powerwash Dish Spray, a 5–10 minute soak, and a non-metal brush or textured sponge.
  5. Rinse and dry the pan. Avoid extended soaking when the product instructions prohibit it.

Do not use steel wool, metal scrapers, knives, aggressive scouring pads, oven-cleaner chemicals, or unapproved abrasive powders. Baking soda is also not automatically harmless on a coating because its particles can scratch.

If the coating is scratched, peeling, blistered, or flaking, more cleaning will not reliably restore it. Replace the pan rather than increasing the chemical strength or scrubbing pressure. Choose a manufacturer-approved baking sheet replacement suited to your oven and cooking needs.

Can you put a baking sheet in the dishwasher?

Only if the exact product is labeled dishwasher-safe. Material alone is not enough to answer the question.

  • Non-anodized aluminum: generally should be hand-washed because dishwasher detergents can discolor or damage it.
  • Nonstick: some products are labeled dishwasher-safe, but manufacturers may still recommend hand washing to extend coating life. Nordic Ware’s cited nonstick guidance advises against dishwasher use.
  • Stainless steel: often tolerates the dishwasher better, although hand washing may reduce spotting, cosmetic wear, and warping.
  • Disposable aluminum: can break down or leave marks in a dishwasher.

Check the care guide for the exact brand, model, and finish. If you cannot identify the sheet, hand washing with hot water, dish soap, and a soft tool is the lower-risk choice.

Should you use vinegar on a baking sheet?

Do not make vinegar the default treatment. Acidic ingredients such as vinegar and tomato sauce can darken or corrode aluminum over time. One manufacturer guide lists a baking-soda-and-vinegar method as a possible option for some aluminum cookware, but guidance is not universal and acidic cleaning may worsen discoloration.

If your manufacturer specifically permits vinegar, test it on an inconspicuous area first and rinse promptly. Avoid it altogether when the care instructions prohibit acidic cleaners or when the sheet’s material is uncertain.

Never mix these household cleaners

Never mix vinegar with chlorine bleach. The combination can release irritating chlorine gas. Bleach mixed with acids or ammonia can also create dangerous fumes.

  • Use one cleaning method at a time.
  • Rinse the pan thoroughly before changing products.
  • Ventilate the area.
  • Follow the product label and keep cleaners away from children and pets.

Why baking sheets turn dark

Repeated heating can polymerize cooking oils, creating a dark, hardened patina. A dark sheet is not automatically unsafe or dirty. The practical test is the surface: a flat, stable stain may be cosmetic, while sticky grease, raised carbon, flaking residue, or burnt food should be removed.

Even the most effective household deep-clean method may leave a shadow of the original discoloration. If the sheet is structurally sound and the remaining mark is flat and clean, replacement is a cosmetic choice rather than a cleaning emergency.

Prevent the next layer of baked-on grease

  • Clean the sheet soon after it cools instead of allowing residue to harden through repeated heating.
  • Use oven-safe parchment paper when both the pan and oven manufacturer permit it. Check the parchment’s maximum temperature and keep it away from heating elements.
  • Do not use aerosol cooking spray on nonstick bakeware when the manufacturer warns that it can build up and impair release.
  • Use a liner only where it is appropriate for the recipe; do not allow parchment to extend into contact with an oven’s heating element.
  • Store sheets dry and avoid stacking heavy cookware directly on delicate nonstick surfaces.

When cleaning is no longer the answer

Replace a baking sheet if it is badly warped, has a damaged or peeling coating, exposes flaking material, develops deep corrosion, or can no longer sit safely on the oven rack. A flat dark patina is different from structural damage. Do not use increasingly aggressive cleaners to rescue a surface that is already failing.

Quick decision guide

  • Light residue: hot water, dish soap, and a soft sponge.
  • Stuck-on food: brief soak, then a plastic scraper or non-metal brush.
  • Baked-on grease on bare aluminum or uncoated metal: baking-soda paste; for severe buildup, baking soda wet with 3% hydrogen peroxide.
  • Stainless-steel discoloration: stainless-steel cleaner or polish used according to its label.
  • Nonstick or ceramic coating: warm soapy water and approved soft tools; replace if scratched, peeling, or flaking.
  • Uncertain material: follow the manufacturer’s care guide or use the gentle universal first pass.

Frequently Asked Questions

Is a dark baking sheet dirty?

A dark baking sheet is not automatically dirty or unsafe. Repeatedly heated oil can form a stable dark patina. Remove sticky grease, raised carbon, burnt food, flaking residue, and anything that transfers to food. A flat stain may remain after cleaning without indicating a safety problem.

Can you use baking soda on a baking sheet?

Baking soda is suitable for some bare aluminum or uncoated metal sheets when the manufacturer permits mild abrasion. It can scratch nonstick, ceramic-coated, or other delicate finishes, so do not use it on coated bakeware unless the care guide specifically approves it.

Can you use vinegar to clean a baking sheet?

Do not use vinegar as a universal baking-sheet cleaner. Acids can darken or corrode aluminum. Use vinegar only when the exact manufacturer’s instructions permit it, test first, and rinse promptly.

Can you put baking sheets in the dishwasher?

Only when the exact product is labeled dishwasher-safe. Non-anodized aluminum and many nonstick sheets are better hand-washed, while stainless steel often tolerates dishwashers more readily. Always follow the model-specific care guide.

How do you remove baked-on grease from a baking sheet?

A baking-soda-and-3% hydrogen-peroxide paste can be tried on compatible bare, uncoated metal. Leave it for several hours or overnight, scrape gently with plastic, then wash and rinse. It may not remove every stain and should not be treated as a universal method for coated pans.

The Bottom Line

The safest route to a cleaner-looking baking sheet is gradual: start with hot soapy water and a soft tool, then use a material-specific treatment only when necessary. Baking soda and 3% hydrogen peroxide can help on compatible uncoated metal, while coatings should be protected rather than scrubbed. A flat dark patina may remain cosmetic; peeling, deep corrosion, or warping calls for replacement.
