How to Build a Backyard Wood-Fired Pizza Oven: Plan, Materials and Steps

A successful backyard pizza oven build depends on choosing one complete design, accounting for insulation and finish in the footprint, and supporting the full assembly.

A reliable backyard wood-fired pizza oven starts with a proven, dimensioned design—not a cooking-floor diameter guessed from available space. Choose the oven geometry, plan the complete insulated footprint, and size a stable support for the finished assembly before buying materials. Forno Bravo’s Pompeii plans provide 36-inch and 42-inch interior-diameter formats; a packaged kit is another option, but its material counts apply only to its specified design.

Choose a design before setting dimensions

Start with a complete plan or a documented kit design, then keep its dimensions consistent throughout the build. The Forno Bravo Pompeii Oven Instructions, Version 2.0 describe 36-inch and 42-inch interior diameters and allow builders to adapt dimensions to their space. These are plan formats, not a recommendation that either size will fit every yard.

A kit may simplify material sourcing, but its quantities are specific to its geometry. VITCAS describes a kit for an approximately one-metre oven that includes 280 fire bricks and 34 tapered arch bricks. Those counts should not be used to estimate a differently sized or shaped oven. Compare plans by cooking-floor capacity, total footprint, included refractory and insulation, customization options, and the cutting and masonry work required. The cited sources do not establish directly comparable build costs or measured cooking performance.

Design the whole assembly, not just the hearth

Set the cooking-floor diameter, entrance width and height, working height, dome or tunnel shape, and flue route as a coherent design. Then add the dimensions of floor insulation, dome insulation, reinforcement, and exterior finish. The foundation must accommodate that complete finished footprint; sizing it to the cooking-floor diameter alone can leave the support too small.

Plan support and check the site

Before construction, confirm that the proposed location and support work for the oven’s full weight, including its outer covering. The VITCAS materials guide and Armil CFS assembly guidance call for a flat, level base that supports the oven and decorative covering. These general guides do not provide site-specific foundation engineering, so a design for a particular site may require qualified structural advice.

Check local building, fire, planning, and property requirements for the actual installation. Armil CFS advises checking local codes. KÜHL’s backyard oven guide gives example spacing advice—at least three feet from the home and a suggested three-to-five-foot gap—but those figures are not a universal clearance or a code determination. Local rules and the site conditions take precedence.

Match materials to their job

A masonry oven is a thermal assembly: dense refractory surfaces form the hot chamber, while insulation limits heat escaping through the floor and dome. Use materials specified for the design and follow each product maker’s instructions.

Component Role Selection note
Firebricks Cooking floor and refractory chamber Check the brick dimensions and rating against the chosen design. VITCAS describes its own dense firebricks for these roles and rates that product up to 1300°C; that rating is product-specific, not a rating for all firebricks.
Refractory mortar, cement, or screed Heat-resistant joints and formed sections Choose the specified material for the plan and follow its manufacturer’s directions.
Floor insulation board Layer beneath the cooking floor to reduce downward heat transfer VITCAS’s guide assigns ceramic-fiber board to this position.
Dome insulation blanket Layer around the refractory chamber to reduce heat loss VITCAS’s guide assigns ceramic-fiber blanket to the dome. Protect and finish the insulation with a suitable exterior system.
Support and exterior materials Carry the complete oven and provide a durable outer finish Use a level, noncombustible support designed for the finished load, with weather protection suited to the assembly.
Entrance and flue components Provide the designed entrance and route combustion gases Use the dimensions and layout from one complete plan; do not borrow a flue dimension from an unrelated design.

Material quantities depend on the oven diameter, wall thickness, brick cuts, entrance design, and finish. Work out quantities only after selecting the design. A supplier’s kit counts are not a universal bill of materials.

Build in a controlled sequence

  1. Select one complete plan or kit design. Decide whether a 36-inch or 42-inch Pompeii format, another documented plan, or a kit suits the intended space and use.
  2. Lay out the full footprint. Include floor and dome insulation, reinforcement, and the exterior finish. Confirm site conditions and local requirements before building.
  3. Build the support. Make it stable, level, noncombustible, and sized for the complete finished oven and covering.
  4. Install the hearth insulation and floor. Place the designed insulation beneath the hearth, then construct the cooking floor and refractory chamber to the selected plan.
  5. Form the entrance, chamber, and flue. Follow the plan’s geometry and flue route. Mixing measurements from unrelated designs can compromise fit and function.
  6. Insulate and protect the exterior. Apply the specified dome insulation and a suitable outer protection and finish. For its assembly, Armil CFS instructs users to cover and waterproof the dome, hearth, and insulating board; use that direction for the relevant system, not as a substitute for another design’s instructions.
  7. Dry and cure as specified. Follow the plan and refractory-product makers’ requirements. Armil CFS says its Model 750 manufactured ovens are kiln dried and do not need curing; that statement applies to that factory-made product, not a newly built masonry oven.

Work safely during cutting and masonry

Masonry cutting and construction call for protective equipment appropriate to the materials and tools in use. KÜHL’s DIY guide lists safety glasses, a respirator or mask, gloves, and hearing protection. Follow tool instructions and material manufacturers’ safety guidance, and choose cutting equipment and protection for the specific task.
