There is no single last date for fall planting: you can plant as long as the crop has enough time to establish and mature in conditions it can tolerate. Start with soil temperature, then work backward from your area’s first expected hard frost using the crop’s days to maturity and frost tolerance.
Why soil temperature matters more than the calendar
Calendar dates are only regional guides. Soil cools as fall advances, slowing establishment and growth, so the same planting date can work in one location and fail in another. UC Cooperative Extension says, “Timing of fall planting has much to do with soil temperature,” and recommends soil at about 55°F at a depth of 6 inches at planting to give plants time to establish. A soil thermometer lets you check that condition directly.

University of Minnesota Extension likewise advises considering soil temperature, air temperature, and crop type rather than relying on the calendar alone. Temperature is the key measurement, but it does not replace the other parts of the decision: how long the crop needs, when damaging frost is likely, and how much cold the crop can tolerate.

How to calculate your last planting date
- Find your local average first killing-frost date. Use a date relevant to your location, not a planting calendar written for another region.
- Check the cultivar’s days to maturity. Use the seed packet or plant information, and make sure the figure is counted from outdoor sowing or transplanting as appropriate.
- Allow extra time for fall conditions. Shorter days and cooler weather slow growth. University of Maryland Extension uses a 14-day short-day factor in its fall-crop calculation; other extension approaches add comparable time for fall growth and frost-tender crops.
- Count backward from the frost date. Tender crops should have time to mature before a killing frost. Hardier crops can keep growing closer to frost and may be harvested afterward.
- Check the soil before planting. If it is too cool for establishment, a date that looks adequate on paper may still be too late.
As regional illustrations—not universal planting dates—Iowa State University Extension lists leaf lettuce at 45–60 days to maturity, with planting from early August to early September; radishes at 25–40 days, from mid-August to mid-September; and spinach at 45–60 days, from mid-August to early September. Your local frost date, cultivar, and growing conditions can shift those windows.

How crop frost tolerance changes the answer
| Crop group | Examples | How frost affects the planting window |
|---|---|---|
| Hardy | Kale, spinach, lettuce, broccoli, cabbage, peas, and turnips | These tolerate frost better, so they may be planted closer to frost and harvested after it, provided they can establish and grow. |
| Half-hardy | Beets, carrots, Swiss chard, radishes, mustard greens, and cauliflower | These tolerate light frosts, but their remaining growth time and the severity of local cold still matter. |
| Tender | Beans, cucumbers, tomatoes, peppers, squash, and melons | They need enough time to mature before a killing frost; late planting is riskier because they cannot rely on frost tolerance. |
Can you still plant after the first frost?
For many fall vegetables, the first frost is a warning point, not an automatic end to planting. Hardy crops may handle frost and continue toward harvest. Half-hardy crops can tolerate light frost, while tender crops need to finish before a killing frost. The relevant date is the expected damaging frost for your area and crop, not simply the first chilly night.
Garlic follows a different schedule
Garlic is usually planted in fall to establish roots before winter, rather than to mature into a fall harvest. University of Minnesota Extension says cloves are usually planted one or two weeks after the first killing frost. Ohio State advises planting after the first frost but two to four weeks before the first heavy frost. University of Maryland recommends mid-to-late October for its region, allowing roots and a few leaves to form before cold weather. These recommendations are regional: the suitable timing depends on location, cultivar, and when the ground freezes.

Can row covers make a late planting work?
A floating row cover can shelter leafy greens from cold overnight temperatures and extend the harvest window; University of Maryland Extension documents this use. It does not give a crop more time to establish before cold soil, nor does it replace selecting a crop with enough time to mature. Treat protection as a way to manage cold exposure, not as a substitute for the planting-date calculation.

UC Cooperative Extension’s guidance gives about six weeks before the first expected frost as a general fall-planting target, and about eight weeks for evergreens. These are broad planning intervals, not guarantees for every vegetable or region. Use the crop’s maturity time, add a fall-growth allowance, and check soil temperature; a short-season crop may fit a later window than one that needs a long growing period.
