It can help identify recipes for a used bread machine, but the upload is not authenticated as an official Hitachi publication, and some of its text may be imperfectly transcribed.

Basic white bread recipe: verify the scan before measuring
The displayed ingredient list for basic white bread names bread flour, tap water, salt, sugar, dry milk, butter and rapid-rise dry yeast. The scan’s text extraction contains OCR errors and inconsistent fraction rendering, so confirm the quantities and wording on the page image rather than relying on copied text. The booklet text also says fresh milk replaces the water and dry milk; check the scanned page for the intended amount before using that substitution.

Rapid-rise dry yeast is the yeast type named in this recipe. The preview also includes a note to reduce yeast if the loaf rises and then falls, but the transcription is imperfect; consult the scan for the exact instruction.

The recipe preview is not the same document as the machine’s use-and-care manual. In the booklet text, a direction says: “Follow the directions for baking bread, steps FOR BEGINNER 1 to 9 on page 9 to 12 in the ‘USE AND CARE MANUAL’.” That reference indicates the booklet expects the manual for operating instructions.
Owner posts on Recipelink include requests for an HB-B102 manual and a report that a scan was found online. These are historical user reports; they do not establish that a link still works or that a copy is official. Hitachi’s Japanese cooking-appliance support site has a general manual search and release-year index, but the available information does not confirm that the HB-B102 manual is listed there.

A historical Recipelink reply mentioned purchasing Hitachi manuals or cookbooks through an authorized parts distributor at that time. That old reference does not confirm the distributor’s current contact details or availability.

An iFixit-hosted guide titled for HB-B102 motor replacement documents a model-specific repair procedure and names a replacement motor in its parts list. It is repair documentation, not a recipe booklet or proof that a particular motor is currently sold, fits every machine, or is safe for every repair situation. Check the guide’s model details and part information before treating it as applicable to a specific unit.
