In the United States, heavy cream and heavy whipping cream are the same product. Both names identify cream with at least 36% milkfat under the federal standard. Regular whipping cream, also called light whipping cream, is a lower-fat category—generally 30% to 36% milkfat—so it can whip but usually produces a softer foam.
Heavy cream and heavy whipping cream are alternative names
The phrase “heavy whipping cream” does not describe a separate product from heavy cream. The U.S. federal standard for cream states that heavy cream contains not less than 36% milkfat and permits “heavy whipping cream” as an alternative name.
Consequently, a carton labeled either heavy cream or heavy whipping cream belongs to the same federally defined category. The wording may differ by brand, but the minimum milkfat requirement does not.
These definitions are U.S.-specific. Other countries can use different names, classifications or fat thresholds, so check the local label when shopping outside the United States.

How the cream categories compare

The milkfat number is the most important comparison. Within a category, brands can also differ in stabilizers, emulsifiers, homogenization and other processing choices. Read both the percentage and the ingredient list.
Can you substitute whipping cream for heavy cream?
Using heavy cream in a recipe calling for whipping cream
Yes. Heavy cream and heavy whipping cream can be substituted for one another in essentially the same amount. The result may be slightly richer or thicker because the heavy product contains at least 36% milkfat, but the substitution is normally straightforward.
Using regular or light whipping cream in place of heavy cream
Often, yes—but expect a different texture. The lower fat content can make whipped cream softer and less stable, and it may give sauces, custards or desserts a lighter body. The substitution is most forgiving when the recipe does not depend on firm peaks or a particularly rich mouthfeel.

For a cake topping that must hold its shape, a piped dessert, or a preparation that relies on cream for richness, choose heavy cream or heavy whipping cream when available.
Why half-and-half is not a direct substitute
Half-and-half is a much lighter product, generally 10.5% to 18% milkfat. It works well in coffee and some lighter sauces, but its fat level is not a practical replacement when a recipe requires whipping or the body supplied by heavy cream.
Which cream is best for whipped cream?
Choose heavy cream or heavy whipping cream for the firmest, most stable result. Its higher milkfat gives the whipped foam more structure and a fuller taste. Regular whipping cream can still be beaten into a topping, but the peaks are typically softer and the foam less durable.

Keep the cream cold, use a chilled bowl and beat only until the desired peaks form. Overbeating can push the mixture past whipped cream toward butter, regardless of the label. Stabilizers in some commercial products may also affect how long the topping holds, so the ingredient list matters when comparing cartons.

Sauces and soups
Heavy cream contributes more richness and body. Light whipping cream can produce a thinner, lighter sauce; whether that is desirable depends on the recipe and the intended finish.
Custards and ice cream
Higher-fat cream generally creates a fuller mouthfeel. A lower-fat product may still work, but the finished dessert can be less rich and may have a different texture.

Coffee and pouring
Either whipping-cream category can be poured into drinks, although heavy cream tastes richer. Half-and-half is the more typical choice when you want a lighter coffee addition.
What to check on the carton
- Milkfat percentage: In U.S. labeling, 36% or more identifies the heavy category; 30%–36% is generally regular or light whipping cream.
- Exact product name: “Heavy cream” and “heavy whipping cream” are equivalent U.S. names.
- Ingredient list: Stabilizers or emulsifiers can change whipping behavior and storage characteristics.
- Package instructions: Processing, date labeling and handling guidance vary by brand.
- Country of sale: Do not assume U.S. definitions apply elsewhere.
Storage and handling
Keep cream refrigerated at 40°F (4°C) or below in its original container. Follow the package’s use-by guidance after opening; an exact opened-life promise is not universal because formulations, temperatures and handling differ. Discard cream if it develops an off odor, unusual appearance or other clear signs of spoilage.
