Growing Leafy Greens in Winter: Crops, Timing, and Frost Protection

Spinach, kale, collards, and other cold-tolerant greens can make winter growing possible. Planting dates are regional, and protection helps but cannot replace light or guarantee a harvest.

Winter greens are possible when you choose cold-tolerant crops, plant early enough for them to establish, and protect them from harsh weather. Spinach, kale, collards, arugula, mustard greens, and corn salad are among the options; lettuce and chard can also work, but need more cautious timing and protection. Winter survival does not guarantee steady growth or harvest: short days can slow plants even under cover.

Which leafy greens can survive frost?

Oregon State University Extension groups crops by relative frost tolerance. Its categories are useful for choosing what to grow, but they are not guarantees for every variety, site, or length of exposure.

Crop group OSU frost category Practical use
Spinach, kale, collards, arugula, mustard greens Heavy frost: below 28°F Good candidates for a winter planting, provided plants establish before severe cold.
Lettuce, chard Light frost: 28–32°F Can extend a winter salad mix, but are less frost-tolerant than the crops above and benefit from protection.

These temperature bands are OSU Extension’s crop categories, not universal survival thresholds. Cultivar, exposure duration, wind, moisture, and growing conditions affect results. OSU Extension’s frost guidance provides the categories.

Other useful winter greens

Corn salad, also called mâche, is included in OSU’s regional winter-crop guidance and can add a mild salad green alongside more familiar choices. No single crop or cultivar is best for every climate.

When should I plant greens for winter?

Plan a fall sowing so plants have time to establish before days shorten and hard freezes arrive. The date depends on your region and the crop: OSU’s west-of-Cascades guide gives crop-specific planting windows, while its broader guidance includes September sowing for spinach, greens, endive, and mâche, and October planting of spinach, kale, greens, lettuce, and endive when season extenders are used. A 2025 OSU article describes mid-August to early October as a possible window for some cold-hardy crops, depending on crop.

Those dates are not a universal calendar. Use your local extension service’s planting guidance, and work backward from your typical first frost and the point when short winter days limit growth. Young plants need time to establish; sowing too late can leave them small going into winter. Regional cultivar examples

OSU’s west-of-Cascades winter guide lists arugula ‘Astro’; kale ‘Black Tuscan’, ‘Winterbor’, and ‘White Russian’; lettuce ‘Winter Density’, ‘Continuity’, and ‘Merveille de Quatre Saisons’; and collards ‘Champion’ and ‘Vates’. These are examples from that regional guide, not universal recommendations. Check local suitability and current seed availability before choosing a cultivar. The guide’s crop and cultivar information is specific to west of the Cascades.

How can I protect greens from frost?

Protection can reduce exposure and extend the season, but it cannot guarantee that plants will avoid frost injury. Choose a method suited to your weather, setup, and willingness to monitor it.

Method How it helps Trade-offs and care
Floating row cover Breathable fabric provides a simple barrier over greens and can protect against early or late frost. Secure the edges against wind and check the crop and cover as conditions change. Fabric may rest on foliage.
Low tunnel Hoops hold the cover above plants, reducing the chance that fabric sticks to wet foliage after freezing precipitation. Requires hoops and a secure covering; monitor weather and the plants beneath it.
Cold frame A shallow, unheated structure with a transparent lid gathers solar warmth by day and shelters plants at night. Use a hinged lid and ventilate on sunny days to prevent excess heat buildup. It does not overcome short-day light limits.
High tunnel or greenhouse A larger protected structure can support winter production. Ventilation, temperature swings, and light remain important; greater protection does not mean unrestricted growth.

USU Extension describes row covers as an option for leafy greens throughout their growth, while OSU notes that winter row cover is breathable and permeable to moisture. A supported low tunnel can keep the fabric off foliage. For cold frames, OSU’s season-extender guidance explains the role of daytime ventilation.

Choose for your site, not just the forecast

  • Consider wind, rain, and snow, and secure covers accordingly.
  • Decide whether you want fabric to rest on the crop or be held above it.
  • Make sure a cold frame or enclosed structure can be vented when sunny.
  • Expect less new growth when winter light is limited, even if plants are protected.

Will greens keep growing and producing through winter?

Not necessarily. Cold protection helps plants survive, but it does not supply the light they need to grow. Penn State notes that winter sunlight can limit production in protected structures; plants may remain alive while making little new growth during the darkest period. Its high-tunnel discussion says sunlight can constrain growth before approximately mid-February or early March in that context. That timing applies to the described high-tunnel setting, not to every region or garden structure. Penn State’s high-tunnel leafy-greens guidance discusses the light constraint.

For winter growing, distinguish three goals: keeping plants alive, harvesting leaves already grown, and producing new leaves during the coldest, darkest stretch. A cover may help with the first two without making the third reliable. OSU vegetable breeder Jim Myers described winter gardening as “a risky business” in a 2025 OSU article.

How do I plan a practical winter planting?

  1. Check local timing. Use a regional extension calendar rather than applying another climate’s dates to your garden.
  2. Choose crops by relative hardiness. Start with spinach, kale, collards, arugula, or mustard greens; treat lettuce and chard as less frost-tolerant options.
  3. Sow with establishment time in mind. Aim for a fall planting early enough for plants to develop before short days and hard freezes.
  4. Select a protection method. Use row cover for a simple barrier, a low tunnel to hold fabric above foliage, or a ventilated cold frame where its structure suits the site.
  5. Monitor rather than assume. Secure covers, ventilate enclosed structures on sunny days, and account for light limits as well as temperature.
