Garden Vegetables: 6 Pretty Edible Plants for Your Garden Design

Swiss chard, purple cabbage, lettuce, red mustard, bronze fennel, and Romanesco broccoli bring distinct color, texture, and form to an edible garden.

Some vegetables earn a place in a garden for their foliage, color, or sculptural shape as much as for the harvest. Six especially versatile choices are Swiss chard, purple cabbage, lettuce, red mustard, bronze fennel, and Romanesco broccoli. This is a design-minded selection, not an objective ranking: the best fit depends on your climate, available light and space, and whether you want to prioritize eating, display, or both.

What makes a vegetable ornamental?

An ornamental vegetable is an edible crop chosen partly for how it looks in a planting. Leaf color, texture, height, and overall form can bring structure and seasonal interest to a bed or container. Swiss chard: a colorful foliage anchor

Chard is often grown as an ornamental for its colorful stalks, and mixes of varieties are sold as rainbow chard. Its leaves and stems are edible, so its display value does not come at the expense of a useful harvest. UF/IFAS’s Swiss chard guide describes its ornamental appeal and color range.

Purple cabbage: a cool-season color block

The broad leaves of purple cabbage make a strong, saturated patch in a planting. UF/IFAS identifies it as a colorful addition to a winter garden. That seasonal guidance is written for Florida; gardeners elsewhere should use local planting advice rather than assume the same timing.

Lettuce: low foliage with varied shapes

Leaf lettuce works well near the front of a bed, where its lower foliage can be seen. Iowa State Extension notes that many lettuce types are attractive and identifies leaf lettuce as an ornamental option. Combining different leaf shapes or colors creates contrast without needing a tall plant.

Red mustard: a contrasting foliage accent

Red mustard introduces color among green crops, while its leaf texture adds another visual difference. UF/IFAS includes ‘Red Giant’ mustard among attractive edible choices. Use it where its foliage can be seen rather than letting taller neighbors hide it.

How to arrange vegetables for a designed garden

Build a planting around contrasts rather than treating every crop as a separate feature. Pair broad leaves with fine foliage, dark or red tones with green, and low plants with taller forms. Lettuce can define a front edge; chard can provide strong color; Romanesco can draw the eye as a focal point. A potager-style layout can also use paths, trellises, and archways; a trellis adds height and supports vining crops.

Foodscaping can combine edible and ornamental plants. UF/IFAS recommends choosing a design style or theme to guide plant choices. Choose for growing conditions as well as looks

Color is only useful if a plant can grow well in its spot. Iowa State Extension advises that vegetables need full sun for production and that production may be compromised without it. It also highlights soil quality, spacing, watering, and pest monitoring as parts of vegetable garden care. These are general pointers, not a crop-by-crop calendar.

  • Check local seasonality: UF/IFAS describes chard and purple cabbage as winter color choices and notes that most ornamental vegetables are cool-season plants. Its guidance is Florida-specific; consult your local extension service for regional timing and frost-date advice.
  • Plan for mature form: Leave enough space for each plant’s foliage and shape to remain visible instead of crowding every contrast together.
  • Balance display and harvest: Decide whether appearance, culinary use, or both matter most before selecting varieties.
  • Ask locally when conditions are uncertain: Your local extension service can help with plant selection, pests, and landscape questions.

Does ornamental mean it will taste good?

No. Ornamental value does not guarantee appealing eating quality. UF/IFAS says ornamental kale is technically edible but very bitter and best used as a garnish. For any ornamental crop, check whether the variety is intended for culinary use and choose accordingly if you expect to harvest it for meals.
