How much sun do winter vegetables need?
Winter does not make sunlight unnecessary or lower a plant’s light requirement. Short days and weaker seasonal light can make it harder to supply enough, so use the sunniest suitable site available and avoid dense shade.

Oregon State University (OSU) Extension’s regional winter-garden handout recommends choosing a site with at least eight hours of direct sun. That is a site-selection rule for the winter garden described in the handout, not a universal minimum for every crop. OSU’s broader vegetable guide says certain crops can grow with less: listed leafy, root, and brassica crops may do well with four to six hours of sun or dappled shade. No vegetable grows well in full, dense shade.

- Leaf, stem, root, and bud crops: Salad greens and other leafy greens, kohlrabi, broccoli, cauliflower, peas and beans, turnips, radishes, and beets are among the crops OSU lists as tolerant of four to six hours of sun or dappled shade.
- Fruiting crops: Tomatoes and peppers need stronger, more direct light. OSU notes they may not get enough light late in the season, making them poor choices for a dim winter site.

Does cold weather mean winter vegetables need less fertilizer?
Not automatically. Cold slows growth, but it does not erase nutrient needs. In a 2025 OSU Extension article, vegetable expert Jim Myers described how, within an air-temperature range of 40°F to 98°F, growth rate doubles for every 18-degree rise. That observation is bounded to the stated range and should not be treated as a universal rule for every crop or temperature.
Fertilizer decisions should reflect the crop, soil fertility, and whether plants are actively growing, overwintering, or resuming growth in spring. OSU’s winter-garden handout recommends low-nitrogen fertilizer during bed preparation. Its general Oregon vegetable guide, by contrast, says that a balanced fertilizer application is sufficient in most cases. These recommendations address different contexts; neither means every winter bed needs less fertilizer or needs a fertilizer application at all.

When additional nitrogen may help
OSU’s winter-production guidance says winter vegetables that continue growing in spring may benefit from supplemental nitrogen if soil nitrate is low. Nitrogen is commonly reapplied during active growth, but pale or yellow foliage and stunted growth are clues—not proof on their own—that a plant is deficient. Check soil and crop conditions, and follow fertilizer labels and local Extension advice before applying more.

For context, OSU’s general Oregon vegetable-gardening guide gives an example rate of about 3 pounds of nitrogen per 1,000 square feet, described as sufficient in most cases for vegetable crops. It is not a winter-specific prescription, and it should not be applied as a blanket rate without regard to soil, crop, and local recommendations.

A practical way to decide
- Check the site’s direct sun. Favor the brightest suitable bed or growing area; distinguish dappled shade from dense shade.
- Choose crops for that light. Consider leafy, root, and bud crops where sun is limited; reserve the brightest locations for crops that fruit.
- Identify the plant’s growth stage. A crop that is dormant or barely growing in cold conditions may have different immediate needs from one actively growing or restarting in spring.
- Base fertilizer on soil and crop needs. Use local soil-test guidance where available, and follow the product label and local Extension recommendations rather than assuming winter calls for less or more.
