Can You Compost Thanksgiving Leftovers? What Goes in a Backyard Pile

Plain fruit and vegetable scraps are the easiest Thanksgiving additions to a backyard compost pile. Keep turkey, dairy, gravy, and greasy foods out, and cover scraps with dry browns.

Yes—but mostly the plain fruit and vegetable scraps, not the turkey dinner left on the plate. For a typical backyard compost pile, add chopped produce trimmings, coffee grounds, paper filters, and crushed eggshells; keep meat, bones, dairy, gravy, and greasy foods out. Cover food scraps with dry leaves or other carbon-rich browns to help manage moisture and odors.

What Thanksgiving scraps can go in a backyard compost pile?

Sort by ingredient, not by whether a dish is called a leftover. Plain plant-based preparation scraps are generally suitable for home composting. Mixed foods containing meat, dairy, fats, or sauces are not a good fit for an ordinary backyard pile.

This is a conservative guide for a household backyard pile. Commercial and municipal facilities may accept materials that a small home pile should not; follow the specific program’s rules. EPA also advises against putting compostable foodservice ware and compostable bags in a backyard pile.

EPA defines composting as “the managed, aerobic (oxygen-required) biological decomposition of organic materials by microorganisms.” In practical terms, a pile needs suitable ingredients, air, and moisture—not just a heap of scraps. See the EPA’s home composting guidance.

How to add holiday scraps without making a smelly pile

  1. Save browns first. Set aside dry leaves, small twigs, untreated wood chips, or suitable uncoated shredded paper or cardboard. These dry, carbon-rich materials help balance wet food scraps.
  2. Layer and cover. Start with a coarse brown layer, add chopped fruit and vegetable scraps, then use at least two to three volumes of browns for each volume of greens. Cover food scraps with four to eight inches of browns, following EPA’s home-pile recommendations.
  3. Keep moisture and air in balance. Aim for a texture about as moist as a wrung-out sponge. Turn the pile occasionally to introduce air and move outer material toward the center; a garden fork can do the job.
  4. Correct problems by adjusting the mix. If the pile smells bad, add dry browns and turn it. If it is dry, moisten it and turn it. If it is not heating, EPA suggests mixing in greens and turning.

EPA’s broader overview of composting approaches describes roughly three parts browns to one part greens by volume. That volume ratio is not the same as the approximately 30:1 elemental carbon-to-nitrogen ratio EPA also discusses.

When is compost ready to use?

Use appearance and smell rather than a calendar date. Finished compost is dark, loose, crumbly, and soil-smelling, with most original inputs no longer visible. When the pile no longer heats after mixing, let it cure for at least four weeks before using it as a soil amendment in garden beds or around plants. Do not treat raw or actively decomposing scraps as finished compost.

EPA estimates a well-maintained pile may finish in about three to five months, while an untended pile may take about a year. These are approximate guidance ranges, not guaranteed schedules; conditions and maintenance affect the pace. A well-maintained backyard pile may reach 130° to 160° F, according to EPA, but that range is not a guarantee that every pile reaches it or proof by itself that compost is finished or safe to use. What if you do not have room for a backyard pile?

Check whether your municipality or a community composting program accepts household food scraps. Accepted materials and collection availability vary by location, so confirm the local rules before setting aside meat, dairy, or other items excluded from a home pile. A backyard pile can be open or contained; a bin is optional, not a requirement. EPA describes backyard composting, vermicomposting, and community or municipal options in its pages on composting and composting approaches. Choose based on space, scrap volume, and the materials you can manage. A residential food-scrap grinding or dehydrating appliance does not make finished compost: its output still needs a composting system or an appropriate collection program.
