Best Tamale Steamer Pot: How to Choose the Right Size and Setup

Find a tamale steamer setup that fits your batch, stove, and storage: compare purpose-built pots with a stock pot and compatible basket.

For large batches, choose a lidded tamale steamer with a perforated insert that keeps tamales above the water. For smaller batches—or if you already own suitable cookware—a deep stock pot or saucepan with a compatible steamer basket can work. Match the pot’s capacity and dimensions to your batch, stove, sink, and storage space; listed tamale counts are maker estimates, not standardized capacity tests.

Choose a purpose-built steamer or use a pot you own

A tamale steamer needs a lower vessel for water and a stable perforated platform or upper vessel to hold tamales above it. Purpose-built models combine those parts with a lid. A stock pot or deep saucepan plus a steamer basket is a practical alternative when the pieces fit together and leave enough room for the tamales and lid.

Purpose-built steamers

IMUSA’s 16-quart aluminum steamer has a removable insert and is listed by the manufacturer as suitable for tamales. Its product page says to hand wash it. IMUSA’s 20-quart aluminum steamer also has a removable insert; the manufacturer lists gas, electric, and glass-top cooktop compatibility.

Bayou Classic’s aluminum steamer is a two-piece set with a lid, perforated upper vessel, and lower vessel that can also be used for simmering. The manufacturer states a capacity of up to 150 tamales and describes the steamer for use with certain Bayou Classic cookers. Confirm the intended heat source and dimensions before choosing it for a home stove.

Concord Cookware’s Mi Abuela stainless-steel steamer comes in 20- and 30-quart sizes, has an insert and exterior maximum-fill line, and lists different capacity ranges by size. These are manufacturer specifications, not independently tested batch counts.

Stock pot and basket

Texas Tamale Company’s stovetop instructions use a saucepan and steamer basket or vegetable steamer. Made In lists tamales as one use for its basket designed for its 8-quart stock pot. A basket and pot must match in diameter, sit securely, and provide enough headroom for the food and lid.

Compare capacity, design, and fit

Size and batch capacity

Choose capacity based on the number and dimensions of the tamales you actually plan to steam. Published tamale counts cannot be compared as if they were standardized: count depends on tamale size and how the pieces are arranged. Check the vessel’s width and height as well as its quart rating, then make sure it fits your burner, sink, cabinet, or other storage space.

Insert and vessel construction

Look for a stable perforated platform that keeps the tamales above the water. Some steamers are one pot with a removable insert; others are a two-vessel set with a separate perforated upper vessel. A stock pot and basket offer flexibility, but only if the basket rests securely and leaves space for the lid to close.

Material and care

The documented purpose-built options include aluminum and stainless steel. Follow the specific maker’s care directions: for example, IMUSA says its 16-quart model is hand wash only. Do not assume that cookware materials or finishes share the same cleaning requirements.

Cooktop and water access

Use the manufacturer’s compatibility statement for the exact model, and compare the pot’s base with your burner. IMUSA lists gas, electric, and glass-top compatibility for its 20-quart model; Bayou Classic describes its product for certain of its cookers. For longer steaming sessions, a marked fill line or straightforward access to the lower water vessel can make it easier to manage water without disturbing the tamales. Concord lists an exterior maximum-fill line.

Steam tamales without letting them sit in water

  1. Check the fit. Set the insert or basket in the pot and confirm it is stable, sits above the water line, and leaves room for tamales and the lid.
  2. Add water below the insert. Texas Tamale Company’s stovetop method says to add water just below the basket level.
  3. Arrange the tamales. Place them in the basket, open end up if possible, following your recipe’s arrangement and spacing guidance.
  4. Cover and bring the water to a boil. Keep the lid on while steaming and monitor the water level so the pot does not boil dry.
  5. Use the recipe’s timing and doneness cues. Texas Tamale Company instructs steaming its tamales for 15–20 minutes depending on the quantity in the pan. That is its instruction for its tamales, not a universal time for homemade or frozen tamales.

Use a thermometer for meat fillings

Steaming duration alone does not establish that a meat filling has reached a safe temperature. FoodSafety.gov recommends a food thermometer and lists safe minimum internal temperatures of 160°F (71°C) for ground meat and 165°F (74°C) for poultry. These temperatures address the filling’s food safety; they do not specify a tamale steaming time or determine whether the masa has reached the texture you want.
