A steam juicer can turn a large quantity of fruit into juice in batches, but the available sources do not establish one model as the best performer. Choose by the size of the three working vessels, whether it fits your cooktop, how juice drains, and how you will handle and clean it. A steam juicer extracts juice; it does not make it shelf-stable.
How a steam juicer works
Most stovetop steam juicers stack three vessels: a water reservoir at the bottom, a juice-collecting pan above it, and a perforated basket for produce on top, covered by a lid. Boiling water sends steam through the fruit or vegetables. As the produce softens, released juice drains into the middle pan and flows out through a hose or spout.
For example, Norpro’s model 624 uses a hose and clamp. The exact arrangement varies by model, so the manufacturer’s instructions—not generic directions—should guide setup and use.
How to choose a steam juicer
Compare all three capacities
Basket capacity indicates how much produce the juicer can hold; it is not the capacity of the whole appliance. Check the produce basket, juice pan, and water reservoir separately. Norpro lists an 11-quart steamer insert, a 4-quart juice container, and an 8.5-quart water pot for model 624. Those are manufacturer-listed specifications, not independently tested measures of juice yield.

A hose and clamp can make it easier to direct juice into a container, while a spout may offer a different way to drain it. Norpro describes model 624 as stainless steel and lists a rubber tube and clamp. Verify current specifications with the manufacturer before buying.

What fruit can go in a steam juicer?
Oregon State University Extension names grapes, berries, apples, pears, and tomatoes as common choices. Iowa State University Extension also lists cherries, plums, apricots, blueberries, strawberries, blackberries, and cranberries. Preparation depends on the fruit and the appliance: Iowa State says apples and pears should be halved and small fruits can be left whole. Follow your juicer’s directions, including any instructions about removing stems, pits, or cores.

Basic steam-juicing steps and safety
Use the appliance manual for its recommended water level, setup, produce preparation, and operating details. UC Cooperative Extension’s general procedure is:
- Fill the lower water pan to the level specified in the appliance manual.
- Set the juice-collecting pan and hose or spout in place as directed.
- Add produce to the basket without overfilling it, then cover the juicer.
- Bring the water to a boil and maintain boiling. Check the lower pan during use so it does not boil dry.
- Leave the fruit undisturbed if you want clearer juice; stirring can make juice cloudy.
- Stop when the fruit has collapsed and juice has stopped dripping, following the manual’s directions for draining.
Steam, pans, hoses, and collected juice can all be hot. Use heat-protective gloves and handle the equipment carefully. Oregon State University Extension’s “Steam juicer” page advises: “Instructions will vary with different models, please follow the manufacturer’s instructions on how to safely use all canning equipment.”

Does juice from a steam juicer need canning?
Yes, if you want to store it on a shelf. Extracting juice and filling jars with it hot does not by itself make the juice shelf-stable. Iowa State University Extension says fruit juice needs hot-water-bath processing for shelf storage and warns against sealing hot-filled jars and leaving them to cool. The National Center for Home Food Preservation likewise advises against open-kettle canning and other methods that do not follow science-based procedures.
Use current, tested canning directions for the specific juice and equipment. A steam juicer extracts juice; an atmospheric steam canner is a separate appliance used to process jars under an appropriate tested procedure. Extracted juice may also be used for drinking, jelly, or freezing.
