How to compare candidates for your counter
- Capacity and menu: Match the stated kettle or pan capacity to expected service volume, refill frequency, and the number of soups on offer. A two-pan well supports two choices; it does not mean each pan has the same capacity as a single large kettle.

A warmer’s thermostat setting or listed range does not prove the soup is at a safe holding temperature throughout service. Use a thermometer to check the food and follow safe procedures for reheating and holding; do not treat a control dial as a substitute for measurement.
