Keep the refrigerator at 40 °F or below and the freezer at 0 °F. The U.S. Food and Drug Administration recommends this kind of thermometer because few refrigerator controls show the appliance’s actual temperature.
What temperature should your refrigerator and freezer be?
Set and maintain the refrigerator at 40 °F or below and the freezer at 0 °F. A refrigerator’s control setting is not necessarily a display of its actual interior temperature, so check the temperature with a separate appliance thermometer rather than relying only on the dial or control panel.
The FDA puts the reason plainly: “Since few refrigerator controls show actual temperatures, using an inexpensive freestanding appliance thermometer will allow you to monitor the temperature and adjust the setting of the refrigerator and/or freezer if necessary.” Read the agency’s Refrigerator Thermometers – Cold Facts about Food Safety guidance.
What kind of refrigerator thermometer should you buy?
For ordinary household food storage, choose a freestanding refrigerator/freezer appliance thermometer that is easy to read and can be placed where you can check it. USDA’s Food Safety and Inspection Service explains that these devices measure the air temperature in a refrigerator or freezer. Common styles include liquid-filled and bimetallic-coil thermometers; some rest on a shelf, while others hang from a rack. See USDA FSIS’s refrigeration and food safety guidance.

Analog or digital: which features matter?

For example, Salter lists stand, hang, and magnetic placement plus a high/low zone indicator for its Digital Fridge Thermometer, model SA00574BFEU12. Those are manufacturer-listed features, not independent comparative test results. No independent head-to-head testing is established here, so there is not enough evidence to name a particular model as the tested best.
How to choose and use one
- Choose a refrigerator/freezer appliance thermometer. A basic freestanding model fits the household need to check actual appliance temperature.
- Pick a placement style that suits your appliance. Use a shelf-standing or rack-hanging design, or magnetic placement only if the product supports it.
- Make sure the reading is easy to check. A clear dial or digital display is useful; high/low indication is an optional feature, not a substitute for checking the current temperature.
- Use the reading to adjust the appliance if needed. The targets are 40 °F or below in the refrigerator and 0 °F in the freezer.
Do you need a probe, alarm, or certificate?
Usually not for everyday home food storage. Buffered bottle probes, high/low memory, programmable alarms, and certificates are features aimed at controlled cold-storage work such as laboratory or vaccine monitoring. VWR, for example, lists these features for its Traceable Refrigerator/Freezer Thermometer, model 61161-364, and positions that product family for laboratory and vaccine-storage workflows. That specialized equipment is a different use case from a household appliance thermometer.

How common are built-in refrigerator thermometers?
The FDA’s 2016 Food Safety Survey found that, in the relevant Version 2 respondent group, 35% said their refrigerator had a built-in thermometer and 62% said it did not. Among respondents who said their refrigerator lacked one, 16% reported putting a thermometer inside. These are survey findings from 2016, not current estimates of how many refrigerators have built-in thermometers or how often households use a separate one. The results are reported in the FDA’s Food Safety Survey.
