For most home cooks, a lidded Dutch oven is the most versatile pot for stew: it works on the stovetop and, if the specific model is oven-safe, can move into the oven for a slow finish. A heavy stew pot is also a strong choice; a tall stockpot makes more sense when you need room for a large, liquid-heavy batch. Choose by batch size, shape, cooking method, and the manufacturer’s specifications—not by the pot’s label alone.
Which pot works best for stew?
Stew can be cooked in a Dutch oven, a dedicated stew pot, or a stockpot. The best fit depends on whether you plan to brown ingredients in the pot, how much you cook at once, and whether you want to finish the dish in the oven.
An enameled cast iron Dutch oven is a useful all-around option for slow stovetop cooking, braising, and oven finishing when the model is rated for it. Its substantial construction retains heat, but a full pot can be heavy. A lower, wider stew pot offers more base area for browning, while a tall stockpot prioritizes liquid capacity.
Compare the main pot types
| Pot type | Best suited to | What to consider |
|---|---|---|
| Dutch oven or cocotte | Slow stews, braises, and roasts; stovetop-to-oven cooking when the model permits | Cast iron retains heat, and a full pot may be heavy. Check the model’s oven limit and care instructions. |
| Stew pot or braiser | Browning, braising, and stewing, especially when a wide base is useful | Usually offers less height than a stockpot; shape and capacity differ by product. |
| Stockpot | Large batches of soup, stock, pasta, and other liquid-heavy dishes | Tall sides accommodate volume, but the shape is less oriented toward browning. Do not assume every model is oven-safe. |
These are task-based distinctions, not the result of a controlled comparison showing one shape always cooks stew better. ZWILLING describes its roasting and stew pots as comparatively low and broad, and stockpots as tall and relatively slim; Anolon likewise describes stockpots as tall-sided vessels intended to limit evaporation during soups, stocks, and boiling tasks. ZWILLING’s cookware guide and Anolon’s cookware guide provide those manufacturer descriptions.

Can you make stew in a stockpot?
Yes. The USA Beef cookery guide says stewing is best done in a heavy stockpot or Dutch oven on the stovetop or in the oven, or in a slow cooker. A stockpot is particularly practical when the recipe makes a large quantity or contains plenty of liquid. Its height can make it less convenient than a wider pot for browning meat across the base, so you may need to brown ingredients in batches or use another pan.
Before using a stockpot in the oven, confirm that the exact pot, lid, and handles are rated for oven use. The guide’s general advice does not establish that every stockpot is oven-safe. Read the USA Beef cookery guide to stewing.

Is a Dutch oven better than a stew pot?
Not in every situation. A Dutch oven is a flexible choice when your recipe calls for slow cooking or braising and you want the option to transfer the pot from stovetop to oven. ZWILLING describes its STAUB cocottes as stove-to-oven cookware and says their cast iron retains heat or cold for a long time; the brand also describes the lid as helping retain moisture and baste food. Those are manufacturer claims, and the oven rating depends on the particular product.
A stew pot or braiser may suit you better if you want a lower, wider cooking surface for browning and do not need as much height. ZWILLING describes its stew pots as deep stainless steel or aluminum nonstick vessels designed for stovetop or oven stewing and braising, but buyers should still confirm oven suitability for the specific item. Its description, “The perfect pot for roasting, braising and stewing,” is the company’s characterization of a stew pot, not an independent performance finding. See ZWILLING’s description of stew pots and cocottes.

What size pot should you choose?
Start with the largest stew batch you usually make, then leave enough room to stir without sloshing. A pot that is much larger than your typical batch may be cumbersome to handle; one that is too small can crowd ingredients and make stirring difficult. Also consider the weight you can safely lift once the pot is full.
ZWILLING Canada gives typical category ranges of 8–16 quarts for stockpots and 6–8 quarts for Dutch ovens, and identifies a 12-quart stockpot as a balance between large liquid capacity and ease of use. These are the manufacturer’s general category guidelines, not universal standards or a rule for every stew recipe. See ZWILLING Canada’s stockpot FAQ.

What to check before buying
- Capacity and shape: Match the pot to your usual batch size, with room for ingredients and stirring. Consider whether a wide base or tall sides better fits your method.
- Lid: Look for a lid that fits well. Lid construction and design vary by model.
- Oven rating: Check the official specifications for the pot, lid, and handles. Do not infer oven safety from the words “Dutch oven” or “stew pot.”
- Cooktop compatibility: Verify that the specific pot works with your cooktop, including induction if relevant.
- Material and care: Follow the model’s instructions. Care differs between enameled and bare cast iron, and product-specific guidance should take precedence over general assumptions.
- Handling: Consider handle security and whether you can lift the pot safely when full.
