For most home cooks, a “long spatula” means a turner that can reach under food and lift it cleanly. A slotted fish turner is a versatile choice for delicate items such as fish, but it also works for burgers, pancakes, and more. Choose its head material first: exposed stainless steel is not the safe choice for nonstick cookware, while a silicone or silicone-coated head is designed for coated pans. Then compare head size and shape, flexibility, handle comfort, and the specific model’s heat and care instructions.
What is a long spatula—and what does a fish turner do?
“Long spatula” is a broad shopping term. The tools most relevant to flipping and lifting food are turners, including slotted fish turners. Their thin, often flexible heads can slide beneath food, while slots let liquid drain as you lift. Despite the name, a fish turner is not limited to fish: Food Network’s review discusses uses including burgers and pancakes as well as fish. Food Network’s fish spatula review describes its selection and testing process.
How to choose a long spatula
Start with the cookware surface
An exposed stainless-steel head is intended for cookware compatible with metal utensils; do not treat it as safe for a nonstick coating. Food Network specifically cautions against using its all-stainless WÜSTHOF pick in nonstick pans and names a silicone option as its nonstick pick. For coated cookware, consider a silicone or silicone-coated head, and follow both the pan maker’s and utensil maker’s care guidance. GreenPan describes its Platinum Silicone Fish Turner as having a metal core with a heat-resistant silicone exterior for use alongside ceramic nonstick pans; that is manufacturer product copy, not an independent test result. GreenPan Platinum Silicone Fish Turner.
Match the head to the food
A narrow, thin, flexible slotted head can help slide under delicate food and drain excess liquid. A wider head may be more useful for larger items or for lifting multiple portions. Food Network’s review describes the OXO Good Grips Stainless Steel Fish Turner as a large slotted option for tasks such as whole fish or several burger patties. The right shape depends on what you cook and how much room you have to maneuver in the pan.
#1 Best Overall
- Great for lifting, turning and transferring whole fish, filets, seafood cakes and more
- Sturdy, oversized, stainless steel head
- Beveled edge helps slide beneath foods
- Slots in head allow grease to drain
Check dimensions and reach
Consider both the length of the handle and the width of the head: enough reach helps you work comfortably across the pan, while a head that is too wide can be awkward in a crowded skillet. Food Network’s 2026 general spatula review search result reports the Misen Fish Spatula at 12.4 by 3 inches. Treat that as a reported product detail rather than a universal size or definitive current specification; check the maker’s listing for the exact version you are considering. Food Network’s general spatula review.
Compare flexibility, slots, and handle comfort
Flexibility affects how easily a head can work beneath food; slots help drain liquid; and handle shape and grip affect control. These are useful comparison points, not a guarantee that one design suits every cook. Food Network says its team considered shape, size, flexibility, slots, handle comfort, and model-specific care and heat limits in its review. Its observations are the publisher’s, not firsthand testing for this guide.

- For delicate food: look for a thin, flexible head that can get underneath it without forcing or tearing.
- For larger food or batches: compare wider heads, but make sure the turner fits the pan and can be controlled comfortably.
- Before buying or using: verify the exact model’s dimensions, temperature limit, cleaning instructions, and current availability.
