Removing air can help protect quality by reducing oxidation, dehydration, and freezer burn. It does not sterilize food or make perishables safe to store at room temperature: refrigerate or freeze them promptly and continue to follow ordinary food-safety guidance.
Which foods are best to vacuum seal?
Vacuum sealing is most useful when the food is headed for the freezer or is already properly dried for pantry storage. The right approach depends on the food’s moisture, texture, and whether the packaging is designed for it.
Meat, poultry, and fish
Portion meat, poultry, or fish for the meals you expect to use, then vacuum seal and freeze promptly. Reducing exposure to air can help limit freezer burn and quality loss. Keep these foods cold before sealing, and do not treat vacuum packaging as a reason to extend their refrigerator storage beyond standard guidance.
Fruit and vegetables intended for freezing
Vacuum sealing can help protect frozen produce from freezer burn and quality loss. USDA guidance for school nutrition operators describes vacuum sealing in-house processed and frozen fruit and vegetables as a way to improve quality; it is preservation guidance, not a guarantee of a particular result in every home freezer. Prepare produce appropriately for freezing, package it in a compatible bag, and store it at 0°F (-18°C) or below.

Properly dried foods
For pantry storage, Iowa State University Extension identifies dried nuts, fruits, vegetables, and jerky as foods for which removing oxygen can help retain freshness. The food must be properly dried: vacuum sealing a moist food does not make it shelf-stable.
How to choose a storage method
Vacuum sealing is a packaging choice, not a preservation kill step. Use it with the storage method the food requires, rather than as a substitute for cold storage or approved canning.

Foods that are wet, soft, or easily crushed
Liquids and moist foods can be difficult to package with an ordinary vacuum-sealer bag, while delicate foods may be crushed. Depending on the food and intended storage, firming or freezing it before sealing, or choosing packaging specifically designed for it, may help. Verify that the bag is food-grade and compatible with the sealer and storage use. Do not infer that a technique suitable for one food is safe for another.
Vacuum sealing does not extend refrigerator safety limits
Keep the refrigerator at or below 40°F (4°C) and the freezer at 0°F (-18°C). FDA guidance says to refrigerate or freeze perishables right away, and not to leave them at room temperature for more than two hours—or more than one hour when the temperature is above 90°F (32°C). Reduced oxygen does not remove the need for these controls.

FoodSafety.gov’s cold-storage chart, last reviewed September 19, 2023, gives the following refrigerator and freezer intervals. These are general storage guidelines, not measurements of extra time gained by vacuum sealing. Refrigerator intervals are safety guidance; freezer intervals are for quality. Food kept continuously frozen at 0°F (-18°C) or below remains safe indefinitely, although its quality can decline over time.

Freezer burn is a quality problem caused by moisture loss and exposure to air; FDA guidance notes that it is not a food-safety problem. If food has been kept frozen continuously, freezer burn affects texture and taste rather than making it unsafe.

Use vacuum packaging without confusing it with preservation
A vacuum sealer and compatible food-grade bags can make it easier to portion food for freezing and reduce air exposure. The appliance helps with packaging and quality; it does not make food safe without refrigeration or freezing, nor does it replace home canning. Iowa State University Extension warns that the low-oxygen environment can permit dangerous anaerobic pathogen growth if food is mishandled. Use pressure canning or water-bath canning when a tested canning process is required.
USDA foodservice guidance advises operators to consult their local regulatory agency before adopting vacuum packaging because of foodborne-pathogen risks. That advice concerns foodservice processing; it is not a household licensing rule.
