USDA’s Food Safety and Inspection Service (FSIS) identifies that category for hot-oil frying and gives a reference range of 100°F to 400°F. Check the specifications and instructions for the particular model before buying or using it.
What kind of thermometer works for deep-frying?
Choose a candy/deep-fry thermometer whose stated range covers the temperatures you intend to use. FSIS says these thermometers measure the extra-high temperatures required for frying with hot oil and describes the category’s range as 100°F–400°F. That is a category reference, not a guarantee that every model covers the full range; confirm the scale and intended use on the product you are considering. What to compare before you buy
Usable temperature range
Make sure the model’s stated range includes your intended frying temperatures. Do not infer an individual thermometer’s limits from the general 100°F–400°F category range FSIS describes.
Clip and positioning
A pan clip can hold the thermometer in place while you monitor the oil. Check that it can attach securely to your pot and position the sensing area in the oil without letting it touch the pan bottom. Follow the manufacturer’s placement instructions.

Readability from a safe position
Consider whether the dial or display is easy to read while you stand back from the hot oil. Readability is a practical selection criterion; the product examples below do not establish a measured advantage for one design.
Use and care instructions
Before using a food thermometer, FSIS advises consulting the manufacturer’s instructions. Check the specific product’s directions for placement, cleaning, and heat exposure rather than applying one model’s care guidance to another.

These manufacturer-described products illustrate features to look for. Their descriptions establish intended use and listed design features, not independently tested accuracy or superiority.

How to use one while frying
- Read the thermometer’s instructions before use, including guidance on placement and heat exposure.
- Attach the clip so the sensing area is immersed in the oil and does not touch the pan bottom.
- Read the dial or display from a position that keeps your hands and face away from hot oil.
- Use the thermometer to monitor oil temperature, while also following safe deep-frying practices; temperature monitoring alone does not make frying safe.
- Clean and store the thermometer according to its manufacturer’s directions.
What the available product information can—and cannot—tell you
FSIS’s guidance supports the candy/deep-fry thermometer category, and the manufacturers describe features of their own products. Those sources do not provide an independent, side-by-side accuracy test or establish a best-performing model. Treat product descriptions as specifications, compare the features that matter for your pot and cooking setup, and verify current availability and specifications with the seller or manufacturer.
