High- and low-temperature machines can require different chemical programs, so there is no universal best detergent—and detergent alone may not be the complete setup.
Start with the machine’s sanitizing method
Check the dishwasher’s model documentation and the chemical requirements for its sanitizing program before comparing products. Aleva Chemical puts the principle succinctly: “The machine decides the chemistry.”
- High-temperature machines use heat for sanitizing, but still need detergent and rinse aid suited to the machine.
- Low-temperature machines may use a chemical sanitizer in addition to detergent and rinse aid. Confirm the required sanitizer and compatible products for your specific machine.
A warewashing buyer guide describes detergent and rinse aid as part of both setups, with chemical sanitizer additionally used in low-temperature machines. What to compare before choosing detergent
Machine and dispenser compatibility
Confirm that the detergent is intended for your machine class and that its format works with the installed dispenser. Commercial products include liquid and solid concentrates; some are restricted to approved dispensing equipment. Do not assume a product can be poured into any dispenser or dosed by the same method as another formula.

Water conditions and food soil
Water quality and the soils your kitchen sends through the machine can affect cleaning results and maintenance. Manufacturers offer different formulas for different conditions, but the sources here do not establish which performs best in a particular kitchen. Use the product’s current technical information and the machine manufacturer’s guidance to select a compatible formula.
Dishware and metal compatibility
Read the exact product label for the items you wash. Some products exclude silver, aluminum, or other soft metals; others describe use with aluminum, copper, pewter, delicate ware, or similar materials. Those claims are product-specific, not interchangeable across a brand or category.

The complete chemical program
Compare the detergent together with its rinse aid and, where the machine requires it, sanitizer. Rinse aid helps water sheet off ware and supports drying, which can reduce spotting. It is a companion chemical, not a substitute for detergent. A low-temperature setup may also require a compatible sanitizer; do not assume detergent sanitizes unless its approved label explicitly says so.

Why commercial dishes may come out spotty
Spotting can be related to how water drains and dries on the ware. Rinse aid supports water sheeting and drying, so check that the installed rinse-aid product is appropriate for the machine and is being dispensed as its instructions specify. Water conditions and the specific chemical program also matter; the available product descriptions do not identify one universal cause or cure.
- Check that the detergent and rinse aid are approved for the machine and installed dispenser.
- For a low-temperature machine, verify that the required compatible sanitizer is part of the program.
- Check the product’s current directions and technical documentation for your water conditions and the ware you wash.
Set up and verify the chemical program
- Identify the machine and program. Find the model documentation and determine whether the machine uses high- or low-temperature sanitizing.
- Confirm chemical requirements. Use the machine manufacturer’s instructions to identify detergent, rinse aid, and—if required—sanitizer specifications.
- Match product format to the dispenser. Check whether the dispenser accepts liquid, powder, or solid concentrate, and whether the product requires approved dispensing equipment.
- Check the ware exclusions. Compare the label against the metals and dishware in your kitchen, especially silver, aluminum, pewter, and other soft metals.
- Use the product’s own directions. Follow its current label and technical data sheet for dosing; do not transfer a dose from another detergent. Keep the safety data sheet available and follow its handling guidance.
- Verify the full program. Confirm that detergent, rinse aid, and any required sanitizer are the compatible products specified for the machine and dispenser.
Why household dishwasher detergent is not a substitute
Commercial dish machines use a defined chemical and dispensing setup. Household dishwasher detergent is not a substitute for commercial machine chemistry. Choose a commercial product whose label and dispenser directions match your equipment, and follow both the product and machine instructions.
