What are the main differences between gel and wick chafing fuels?
Sterno describes wick and gel fuels as having different spill and handling characteristics. These are manufacturer statements, not a guarantee for every product; read and follow the instructions on the specific can.

How do you choose a burn time and match fuel to the chafer?
Estimate how long food will be served, then choose a labeled burn duration that covers that window. Sterno says its range includes burn times from 45 minutes to six hours and advises choosing fuel that lasts for the event. These are manufacturer specifications and guidance; actual performance can vary with the product and setup.

Check the warming equipment’s instructions as well as the fuel label. Sterno’s six-hour Safe Heat with PowerPad, SKU 10370, is a wick product listed for buffet chafers and wire chafers. Sterno says it burns up to six hours and that the can stays cool to the touch while burning. The product page also describes it as UL Validated for cleaner burning indoors and outdoors; that is the manufacturer’s statement, not an independent assessment here. For comparison, Sterno’s product material lists Handy Fuel as a two-hour gel option recommended for chafing dishes and hot boxes. The material says its sale and use are unlawful in Pennsylvania. How do you keep food warm and safe on a buffet?
Fuel warms the chafer; it does not confirm the temperature of the food. The U.S. Food and Drug Administration (FDA) advises keeping hot food at 140°F or warmer and checking it with a food thermometer. The FDA warns that some warmers hold food at only 110°F to 120°F, so confirm that your equipment can maintain the needed temperature. See the FDA’s buffet food safety guidance.
Sterno’s manufacturer FAQ gives separate setup advice: start with the correct amount of very hot water in the chafer’s water pan and ensure food is at a minimum internal temperature of 160°F before placing it in the unit. This is Sterno’s guidance; it is distinct from the FDA’s 140°F hot-holding threshold.

The FDA also says that when a buffet is held where the air temperature is above 90°F, safe holding time is reduced to one hour. Replace nearly empty serving dishes with freshly filled ones instead of adding new food to a dish that already contains food.

What should you check before buying or lighting chafing fuel?
- Estimate the length of service and choose a labeled burn duration that covers it.
- Confirm that the chafer or warmer instructions allow the fuel type and product you plan to use.
- Read the can’s handling and lighting directions; account for the manufacturer-described spill and hot-can differences between wick and gel.
