- Read the model-specific manual. Rack positions differ. Instant manuals, for example, provide separate guidance for broiling, air frying, toast, roasting, baking, warming, slow cooking, and proofing.
- Use the mesh basket for air frying. A solid tray can obstruct airflow and is normally better suited to baking or collecting drips.
- Leave gaps between pieces. Overlapping food reduces circulation and crispness.
- Expect the upper level to brown faster. It is often closer to the heating element, though the exact result depends on the model.
- Rotate trays halfway through. Switch rack positions and turn pans when the manual or recipe allows it.
- Remove finished food independently. Two trays rarely finish at exactly the same time.
- Use a thermometer for chicken and other meats. Preset timing is not a substitute for checking safe internal temperature.
Practical food guidance
Fries and vegetables: Spread them in one layer when possible, shake or turn them, and expect longer cooking or reduced crispness when using two crowded racks.

Dehydrating: Multiple racks are genuinely useful here. Cut food evenly, leave airflow gaps, and rotate racks if the manual recommends it. Dehydration takes much longer than air frying.
Common problems and fixes
The top tray burns while the lower tray stays pale
The upper rack may be too close to the heating element, the cavity may be overcrowded, or a solid tray may be blocking airflow. Move food lower, reduce the temperature, rotate the trays, use the mesh basket, or cook in batches.
One rack browns unevenly
Uneven piece sizes, overcrowding, a poor rack position, or the fan pattern can all contribute. Shake the basket or turn the pan, distribute food evenly, and reduce the batch size.
