How accurate are AcuRite thermometers?

Reporting intervals differ
The cited 00754 listing specifies 16-second reporting; the 00381 and 00822/00831 listings specify 30-second reporting. These intervals describe how often the sensor transmits, not a guarantee that conditions will be measured with greater accuracy.
Match display features to the job
Decide whether you need humidity, a clock or date, high/low records, a trend arrow, signal-strength information, or tabletop and wall mounting. Features vary by model; compare the current product page and manual rather than assuming one display’s functions apply to another.

When a wired probe is the better fit
The 00888 is not a wireless outdoor-sensor alternative: it uses a 10-foot wired probe. Consider it only when that cable arrangement suits the location where you need a probe reading.
