What the stated 21-degree angle means
AccuSharp says the Knife and Tool Sharpener is set at approximately 21 degrees. That is the manufacturer’s stated angle, not an independent measurement or evidence that the angle suits every knife. If your knife has a particular edge geometry or care requirement, check the knife maker’s guidance and the specific sharpener’s instructions before using it. How to use an AccuSharp pull-through sharpener
- Clean the knife blade before sharpening, as AccuSharp advises.
- Draw the blade through the sharpener from the handle end toward the tip. Do not move it back and forth.
- For a blade that curves upward near the tip, lift the knife handle as that curved section reaches the sharpener.
- If a blade is extremely dull and made of very hard steel, AccuSharp says it may need additional pulls. Follow the instructions for your specific model.
