A convection oven uses the same broad principle in a much larger cavity. Air fryers usually win for fast, crisp small portions; convection ovens win for baking, roasting, large meals, and cooking several dishes at once.
Air fryer vs. convection oven at a glance
| Feature | Countertop air fryer | Convection oven |
|---|---|---|
| Basic technology | Heating element and fan in a compact chamber | Heating element and fan in a larger oven cavity |
| Food placement | Perforated basket or crisper plate | Baking sheet, roasting pan, rack, or air-fry basket |
| Best use | Small batches, frozen foods, fries, wings, vegetables, and reheating | Baking, roasting, casseroles, large cuts of meat, and multi-serving meals |
| Preheating | Usually faster because the chamber is small | Usually slower, depending on the oven and setting |
| Crisping | Usually excellent for small, loosely arranged batches | Can be excellent with an air-fry basket and adequate spacing |
| Capacity | Limited by basket surface area and height | Generally much greater, with more cookware flexibility |
| Cleanup | Basket, crisper plate, and drawer need frequent cleaning | Cookware usually contains most residue, but baskets and the cavity can become greasy |
The important distinction is not that one appliance uses “air” and the other does not. Most air fryers and convection ovens both cook by moving heated air. The meaningful differences are chamber size, airflow concentration, food spacing, basket design, heating-element arrangement, and controls.

How each appliance works
What is an air fryer?
A typical countertop air fryer combines one or more heating elements, a fan, a compact cooking chamber, and a perforated basket or crisper plate. The holes allow heated air to reach more of the food’s surface and let moisture and fat drain away.

The compact chamber puts a relatively small food load close to the heating system. That arrangement can make an air fryer particularly effective for browning and crisping foods such as fries, wings, breaded vegetables, frozen snacks, and reheated pizza.
What is a convection oven?
A convection oven uses a fan to circulate hot air around the oven cavity. A conventional oven relies mainly on radiant heat and natural air movement, while a fan convection oven actively moves the air.
Some ovens use true convection, also called European convection, in which a separate heating element is positioned around or near the fan. Others circulate air using heating elements elsewhere in the cavity. A convection toaster oven is a smaller countertop oven with fan-assisted cooking.
An oven with an air-fry mode is still a convection oven, but its program may adjust temperature, airflow, fan operation, or timing and may be intended for use with a perforated basket. Not every convection oven has an air-fry mode, and not every air-fry setting performs equally well. See the distinctions described by Whirlpool’s convection guide and GE Appliances’ convection explanation.
Why does an air fryer often make food crispier?
Moving hot air helps remove moisture from the food’s surface. A drier surface browns more readily, while a perforated basket exposes more of the food to circulating air than a deep, solid-sided dish does.
A small chamber can also maintain concentrated airflow around a modest amount of food. But this is not a guarantee. Crispness depends on:

- The thickness of each piece
- The coating or breading
- The amount of oil

Overcrowding defeats the main advantage. Food packed tightly together blocks airflow and can steam instead of crisping. Arrange food in a loose single layer where possible, or expect to cook in batches.

A standard baking sheet with tall sides or a casserole dish will generally restrict airflow more than a perforated basket. Whirlpool provides model-specific guidance for air frying in a convection oven.
Which is faster?
An air fryer usually preheats faster and often cooks a small batch faster. It has less air and metal to heat, food is close to the heating system, and airflow is concentrated in a small space.
That does not mean an air fryer always cooks a meal faster. Compare four different kinds of time:
- Preheating time: Usually favors the air fryer.
- One small batch: Often favors the air fryer.
- The complete meal: May favor the oven if the air fryer requires several batches.
- Handling and cleanup: Depends on the food, accessories, and how many batches are involved.
For one or two portions of fries, an air fryer may be the convenient choice. For a family-size quantity, a convection oven may finish everything at once even if it takes longer to preheat.
Which has more capacity?
A full-size convection oven generally has much more usable capacity. It can accommodate standard baking dishes, several portions, large roasts, whole poultry, casseroles, and sometimes multiple sheet pans.

- 4-IN-1 FUNCTIONALITY: Features 4 customizable cooking functions—Air Fry, Roast, Reheat, and Dehydrate for maximum versatility. A powerful1750-watt air fryer that’s built for everyday use.
- LARGE CAPACITY: The 5-QT nonstick basket and crisper plate fit up to 4 lbs of French fries or 5 lbs of chicken wings.
- GUILT-FREE FRIED FOODS: Up to 75% less fat than traditional air frying methods. Tested against hand-cut, deep-fried French fries.
- FROZEN TO CRISPY: Cook frozen foods in just minutes for an extra-crispy finish.
Air-fryer capacity is better judged by usable cooking surface than by the advertised quart or liter figure. Two models with the same nominal capacity can have different basket shapes. A wide, shallow basket may crisp more food in a single layer than a tall, narrow one.
Dual-basket air fryers can cook two foods at different temperatures or times, but their separate baskets do not create one large uninterrupted cooking surface. Oven-style countertop air fryers offer more flexibility, though they still may not match a full-size oven for height, cookware, or total batch size.
Which appliance is better for different foods?
| Food or task | Better default | Reason |
|---|---|---|
| One or two servings of fries | Air fryer | Fast preheating and concentrated airflow |
| Large batch of fries | Convection oven or large air-fryer oven | Fewer batches and more surface area |
| Chicken wings | Air fryer for small batches; oven air-fry mode for larger batches | Exposed airflow helps brown the skin |
| Roasted vegetables | Either | Choose based on quantity and desired crispness |
| Frozen snacks | Air fryer | Quick preheating and easy small-batch cooking |
| Reheated pizza | Air fryer for a slice or two; oven for a whole pizza | Appliance size determines efficiency |
| Cookies, cakes, and bread | Convection oven | Better sheet-pan capacity, height, and cookware compatibility |
| Casseroles | Convection oven | Standard baking dishes fit more easily |
| Whole chicken or large roast | Convection oven | More cavity height and capacity |
| Toast | Toaster oven or oven-style air fryer | Better coverage than many basket models |
| Dehydrating | Model-dependent | Requires suitable low-temperature control and airflow |
Can a convection oven replace an air fryer?
Usually, yes for function, but not always for convenience or identical performance. The substitution works best when the oven has a dedicated air-fry mode, a perforated basket, strong fan circulation, and clear instructions for rack placement and food spacing.
Without a dedicated mode, you can approximate air frying with convection bake and a perforated tray. You may need to experiment with temperature, timing, rack position, and batch size. A full-size oven can be especially practical when you are cooking for several people or already own the oven.
A convection oven is less convenient if you regularly want one serving in the shortest possible time, frequently reheat small portions, or want to shake a basket during cooking. It may also take longer to reach temperature.
How to air fry in a convection oven
- Select the oven’s air-fry setting if it has one. Otherwise, begin with convection bake according to the manual.
- Use the manufacturer’s perforated basket or air-fry tray when supplied.
- Place a drip pan underneath if the instructions recommend one, particularly for fatty foods.
- Use the specified rack position. Too close to a heating element can burn the food; too far away can reduce browning.
- Spread the food out and avoid crowding.
- Shake or flip pieces halfway through when appropriate.
- Begin checking earlier than the package or conventional recipe suggests, but do not assume every food will finish earlier.
- Verify doneness with a food thermometer when food safety matters.
Wet batter can drip through a perforated basket, adhere poorly, and create a difficult mess. Use a dry coating or a recipe designed for air frying unless your appliance manual specifically permits wet batter.

Can an air fryer replace a convection oven?
Only for a narrower set of tasks. A basket air fryer can handle small portions of roasted vegetables, meat, frozen foods, reheated leftovers, and some baked items. Some models also toast or dehydrate.

It is not a practical replacement for a full-size oven when you need large baking dishes, full-size pizzas, large roasts, several dishes at once, or generous vertical clearance. Oven-style air fryers expand the range of tasks, but their capacity remains limited compared with a full-size convection oven.
How do you adapt recipes?
A common starting point for adapting a conventional-oven recipe is to reduce the temperature by about 25°F or begin checking approximately 20% earlier. These are starting points, not guaranteed rules. The correct adjustment depends on the appliance, food density, pan material, recipe, and whether the original instructions were written for a conventional oven, convection oven, or countertop air fryer.
For reliable results:
- Read the appliance manual first.
- Use the recipe temperature as a starting point rather than applying a fixed conversion automatically.
- Check food early and monitor browning.
- Leave space around pieces.
- Use a perforated basket or low-sided pan for crisping.
- Shake or flip food when appropriate.
- Use a thermometer for meat, poultry, and other foods where doneness affects safety.
Some full-size ovens require more time than a countertop-air-fryer recipe specifies. Conversely, a small air fryer can overcook food if you follow full-size oven instructions without checking early. Model-specific directions take priority; see the operating guidance in this Whirlpool oven control guide.

There is no universal winner. A small air fryer may use less total electricity for one or two portions because it heats a smaller chamber and may finish sooner. For several servings, a convection oven may be more efficient per portion if it cooks the entire meal in one batch.
The relevant comparison is total energy for the complete meal, not the appliance’s listed wattage alone. Consider wattage, preheating time, cooking time, food quantity, number of air-fryer batches, and whether the oven is already hot. Local electricity rates also affect the cost.

Cleanup, noise, odors, and space
Air fryers contain crumbs and grease in a basket or drawer, and their smaller parts may be quick to rinse. However, the basket, crisper plate, drawer, and heating area may need frequent cleaning. Grease buildup can cause smoke or odors. Only place parts in a dishwasher when the manufacturer’s instructions permit it.
A convection oven often requires cleaning only the cookware after a simple use, especially when a sheet pan is lined. Its air-fry basket can collect grease and crumbs, and residue may smoke during later high-temperature cooking. A drip pan may be recommended beneath the basket.
Basket air fryers occupy counter or storage space, while oven-style models can be larger and heavier. A built-in convection oven avoids adding another countertop appliance but is not an economical reason to replace an otherwise satisfactory oven solely for occasional air frying. Fan noise and odor vary considerably by model, so follow the manufacturer’s required clearance and ventilation instructions.
Do you need both?
You probably do not need both if you already have a capable convection oven and air-fry only occasionally. Try a compatible perforated basket or tray first, following the oven manufacturer’s instructions.
An air fryer may still be worthwhile if you cook small crisp foods several times a week, want fast reheating, prefer not to heat a large oven, or do not mind cooking in batches. The two appliances can complement each other in a larger household: the air fryer handles snacks or a small side while the oven cooks the main meal.
If you are replacing an oven or range anyway, an oven with a dedicated air-fry mode can provide the broadest range of cooking functions without adding another appliance. If you want a countertop oven that also toasts, bakes, roasts, and broils, consider an oven-style air fryer rather than a basket model. Manufacturer examples include the Breville Smart Oven Air Fryer Pro and Ninja countertop convection ovens.
Which should you choose?
- Choose a basket-style air fryer for one to three people, frozen foods, fries, wings, vegetables, reheating, quick preheating, and highly crisp small portions.
- Choose a convection oven for family meals, baking, roasting, casseroles, large cookware, and multiple portions or dishes.
- Choose an oven with an air-fry mode if you are buying or replacing an oven and want one appliance to handle baking, roasting, broiling, and air frying.
- Choose an oven-style countertop air fryer if you need more versatility than a basket model but cannot or do not want to use a full-size oven.
The best decision depends on your normal batch size, not the appliance label. Compare the food you actually cook, the available cooking surface, the number of batches, counter space, and whether you already own a convection oven.
